This crunchy and sweet pickled jalapeno recipe whips up fast in just 10 minutes! They go right into your refrigerator without boiling!

Crunchy &amp; Sweet Refrigerator Pickled Jalapeños

white vinegar

white sugar

mustard seeds

celery seed

jalapeños

salt

Bring the vinegar, sugar, mustard seed and celery seed to a rolling boil.

Fill each jar ¾ full of sliced jalapeno slices.

Pour brine over peppers to within 1/2&quot; of the top.

Wipe off the rim and put lid and ring on.

Label jars with the date so you know exactly how long they have been in the refrigerator. 

Store in the fridge. Store in the fridge for at least 24 hours before eating.

You can also follow proper canning procedures and then process them in a water bath canner if you prefer (will lend a slightly less crunchy pepper). Follow the USDA guidelines for timing.

Be sure to verify that the lids have completely sealed down if storing on the shelf.

Leave for 1 week or longer (if you can stand it!)

Low-carb Vegan Fried Cauliflower Rice

Large Cauliflower head

tbsp Extra virgin olive oil

Onion (finely chopped)

Garlic pods (minced)

tbsp Spring Onion

Carrot (chopped)

Green Beans

Broccoli florets

Green Chilli

Salt

tsp Soy Sauce (or tamari)

tsp Vinegar

tbsp Cilantro leaves/ Green onions (For garnish)

Make Cauliflower rice.

Squeeze out excess liquid with help of a muslin cloth.

Heat oil in a pan.

Add garlic and saute till fragrant.

Add chopped onions, green chillies.

Saute till onions are translucent.

Add chopped carrots, beans, broccoli florets.

Cover with a lid and cook for 2 minutes on low flame.

Then add cauliflower rice to it.

And season with a pinch salt and black paper.

Cook on medium-low flame till the rice starts to soften.

Don&#039;t overcook it. We need that slight crunch in them. It will not take more than 2 minutes.

Then add soy sauce and vinegar. Toss them well.

Cook for 2 minutes more on high flame.

Stir occasionally.

Add onion greens or cilantro leaves.

spinach (pre-cleaned)

Heat oil in a skillet.

Add roughly diced garlic into it and saute on low flame for about a minute.

Now add spinach greens and season with salt.

If you have a little larger quantity os spinach to add, then do that in batches.

Season with  salt and pepper.

Spinach will start to shrink releasing some water.

Keep the flame on medium to high and sauté for 2 - 3 minutes till all water evaporates.

Once all liquid evaporates turn off the heat.

Wilted spinach is ready to serve as a side dish.

Optional- Add a dash of fresh lemon juice
