Perfect for pasta night family dinners, our Easy Pasta Primavera recipe is so simple to pull together.  We used zucchini, yellow squash and peas, but the beauty of this recipe is that you can customize it with whatever veggies you like.

Easy Pasta Primavera

penne pasta

Country Crock® Original Spread, divided

shallots, sliced

garlic, chopped

vegetables

chicken broth or vegetable broth

mint

lemon

Parmesan cheese

Step 1

Cook pasta according to package directions.

Step 2

Meanwhile, Melt 2 tablespoons Country Crock Spread in large nonstick skillet over medium heat.  Add shallots and cook 3 minutes or until tender.  Add garlic and cook 1 minute.

Step 3

Add vegetables and cook 3 minutes, stirring occasionally.  Stir in broth and simmer 5 minutes or until vegetables are tender. Add remaining tablespoon Country Crock Spread.

Step 4

Toss vegetable mixture with cooked pasta, mint and lemon zest.  Sprinkle with Parmesan cheese, if desired.

Our Easy Chicken Skillet One Dish Dinner recipe has everything going for it.  Chicken breast and veggies cook together in one skillet so clean-up is a breeze.  The whole dish comes together in less than 30 minutes, making it great for busy weeknights.  We used zucchini, onion and tomatoes but you can always swap in your favorite veggies.

Season chicken with salt. Melt 1 tablespoon Country Crock® Spread in large nonstick skillet over medium-high heat and cook chicken, stirring occasionally, until thoroughly cooked, about 5 minutes; remove and set aside.

Melt 1 tablespoon Spread in same skillet; add squash and onion and cook, stirring frequently, until almost tender, about 5 minutes.

Add tomatoes; cook, stirring frequently, until softened, about 3 minutes. Stir in chicken, remaining 2 tablespoons Spread, and if, desired, parsley. Season, if desired, with ground black pepper.
