15 minute dinner

Creamy spaghetti carbonara (Spaghetti a la Carbonara) is a simple classic Italian pasta with pancetta that's quick and easy to make in minutes. 

Spaghetti Carbonara

spaghetti noodles

pancetta

garlic, minced

eggs, beaten

Parmesan cheese, shredded

black pepper (or

fresh parsley, finely chopped (for garnish)

Bring a large pot of salted water to a boil over medium high heat. Add spaghetti noodles and cook until al dente (fully cooked but still firm) or according to package directions, about 8-10 minutes. Turn off the heat and set the pot aside.

While cooking the spaghetti, prepare the sauce mixture by whisking together eggs, Parmesan cheese and pepper in a medium mixing bowl. Set aside.

Sauté pancetta or bacon (no cooking oil needed) in a shallow saucepan over medium high heat until crisp, about 3-4 minutes. Add garlic and sauté for another minute until fragrant.

Turn off heat and transfer the hot spaghetti into the garlicky bacon in the saucepan. Add 1 to 2 tablespoons of hot pasta water and stir vigorously to combine. A vigorous whisking emulsifies fat from the bacon and pasta water, creating the classic creamy carbonara.

Stir in the egg-parmesan mixture and toss to coat, about 1 minute. Egg yolk is also an emulsifier which further helps fat disperse throughout the liquid, making the sauce creamy.

Serve immediately on a plate and garnish with parsley and extra parmesan on top, if desired.

This one pot wonder if full of flavor and delicious! It's meatless, and non-dairy! Perfect weeknight dinner that is ready in less than 14 minutes!

One Pot Greek Spaghetti

oz uncooked pot sized spaghetti

olive oil

manzanilla green olives

kalamata olives (drained)

garlic

artichoke hearts (drained)

red onion

cherry tomatoes

oz marinara sauce

tsp pepper

oregano

thyme

vegetable broth

tsp sea salt, more or less to taste

In a large stock pot or dutch oven, add all of the ingredients. Yup, you heard that right &#8211; all of them!

Start by laying the spaghetti down in the bottom of the pot or dutch oven. Then drizzle on the olive oil. Follow that up by adding pitted green olives, pitted kalamata olives, diced garlic cloves, artichoke hearts, red onions and tomatoes.

Then pour marinara sauce over the ingredients. Add salt, pepper, oregano and thyme. And finish it off by pouring in the broth of your choice. Gently mix it all together to distribute the seasoning.

Bring the pot up to a boil over medium high heat, cover and reduce the heat to medium low. Allow the pasta to cook for 11-13 minutes, or until the pasta has reached your preferred texture. Note: we recommend mixing the ingredients again at least once halfway through the cooking process to make sure nothing sticks together.

Garnish with fresh Italian parsley and feta cheese (omit for non-dairy).

I just made this and it is amazing!  I eliminated the red onion because I can’t stand onion but it’s so good that I can’t even wait for the rest of my dinner to be done.  I keep sneaking into the pot!

One Pot Greek Spaghetti | Easy Pasta Recipe

This One Pot Rigatoni is full of flavor, is meatless, and is ready in less than 13 minutes!

One Pot Spicy Rigatoni

unsalted butter

shallot

red pepper (more

oz rigatoni pasta

low-sodium chicken or vegetable broth

tsp kosher salt (more

heavy cream

parmesan cheese shavings

green peas

Place the butter in a pot or dutch oven over medium-high heat. As the butter is melting, add the shallots and garlic into the pan.

Sprinkle in the red chili flake and mix together. Allow the shallots and garlic to soften in the pan by cooking for 1-2 minutes. Be sure to mix often so that the garlic and shallots don’t stick to the pan or burn.

Add the pasta to the hot pan, followed by the marinara sauce, broth, and salt. Mix it all together and bring it up to a soft boil to cook the pasta. Cover and reduce the heat to medium low for about 12-13 minutes.

When the rigatoni is cooked to perfection, add the heavy cream, peas and parmesan to the pasta. Mix it together over medium heat until the sauce comes together. Serve immediately. Feel free to garnish with fresh herbs and a sprinkle of parmesan!

Kodiak Cakes pancake mix (or another mix

cinnamon (optional)

tbsp oil or butter, melted

Preheat your oven to 425 degrees.

Grease your pan with oil, or melted butter. (I like to place the butter on my pan, then put it in the preheating oven for 2-3 minutes to melt. Swirl the butter around the pan to coat it.)

In a large bowl, add the pancake mix, a dash of cinnamon (if using), eggs, and milk. Mix until just combined.

Pour the pancake batter into your prepared sheet pan and spread it evenly across the pan with a spatula. Then top with your choice of add-ins (just sprinkle them right on top of the batter). Strawberries, blueberries, and chocolate chips are a delicious combination!

Bake the pancakes for 12-14 minutes. You’ll know the pancakes are done when you stick a toothpick in the center and it comes out clean. The pancakes should be a very light, golden brown. Be careful not to overcook!
