Mexican spicy chicken chipotle pasta with a creamy and hearty sauce made of chipotle peppers.

Spicy Chicken Chipotle Pasta

lb chicken breast

1.1 lb fresh pasta (read notes)

chipotle peppers

tomato sauce

heavy cream

chicken stock

garlic

cumin powder

chipotle powder

Tablespoons olive oil (to taste)

butter

salt and pepper (to taste)

Add tomato sauce, cream, chipotle chilies, and garlic into a blender.

Add 1 cup of chicken stock and blend until smooth. Set aside.

Season chicken with chipotle powder, cumin, salt, and pepper.

Heat the olive oil in a large pan, add 1 tablespoon of butter and allow to melt.

Add chicken and cook over medium heat until browned on all sides (about 5 minutes).

Add chipotle cream sauce and mix to combine.

Simmer for 3-4 minutes and adjust seasonings to taste. Turn off the heat.

Cook pasta as per instructions on the package.

Drain and add it to the pan with the sauce.

Toss until pasta is nicely coated.

Serve with parmesan cheese and parsley.

This Mexican calabacitas con queso recipe is perfect to serve as a meatless main along with warm tortillas, rice, and salsa. As a side for your favorite protein, or also used to make tacos, quesadillas, and tostadas!

Calabacitas Con Queso Recipe

1.1 lb Calabacitas or zucchini

Oaxaca cheese (or any other melty cheese)

onion

tomatoes (diced)

corn kernels (drained)

poblano pepper or green bell pepper (diced)

jalapeño pepper (chopped)

olive oil

½ tsp ground cumin

½ tsp ground pepper

vegetable stock (or water)

salt (to taste)

Heat oil on a pan or cast iron skillet over medium heat.

Add poblano, jalapeño peppers, and onions. Sauté for 5 minutes or until onions become transparent and peppers start to soften.

Add calabacitas squash and cook, stirring constantly for 3-4 minutes.

Add tomatoes, garlic, and corn. Season with cumin, salt, and pepper.

Mix well and allow everything to cook for 3-4 minutes stirring constantly.

Add vegetable stock (or water), mix well and bring to a simmer.

Cover and cook stirring from time to time until all vegetables are tender.

Adjust with salt and pepper, add ⅔ of cheese and mix well.

Add the remaining cheese on top, cover the pan, and turn off the heat.

Allow resting for a couple of minutes or until cheese melts on top.

Serve as suggested in the recipe notes below.

Served it with rice (added peas and carrots in the rice)
and warm tortillas. Made great veggie tacos! Tomorrow think I will serve with pinto beans.
I added some Greek yogurt for protein and lots of cheese.

All of our garden abundance gets used in this lovely, flavorful recipe.  My shock is that this is not offered at most Mexican restaurants.  It's extremely flavorful and vegan friendly and such a healthy alternative to the deep fried and fat laden Mexican restaurant staples, i.e., tacos, burritos, enchildadas, etc.

This pan seared scallops recipe with toasted israeli couscous and roasted vegetables is homey and delicious.

Pan Seared Scallops with Toasted Israeli Couscous & Roasted Vegetables

Israeli couscous

unsalted butter

carrots (coarsely chopped)

onion (coarsely chopped)

red bell pepper

beets

thyme

kosher salt

black pepper (to taste)

scallops

tbsp grated parmesan cheese

parsley (minced)

Preheat oven to 450.  In a baking dish add the carrots, onion, red pepper, beets, thyme, olive oil and season with salt and pepper.  Toss together and roast in the oven for 20-25 minutes.

Bring 4 cups of chicken stock to a boil.  In a skillet coated with cooking spray add the couscous and toast over medium-high heat until golden brown.  Add to the chicken stock and add butter.  Cook according to package directions (about 12 minutes).

In the same skillet that’s been recoated with cooking spray, add the scallops and sprinkle with salt and pepper.  Sear on each side until cooked through, about 4 minutes (or longer depending on size).

In a large bowl add the couscous, parmesan cheese, roasted vegetables and toss to combine.  Pour onto a serving platter and top with seared scallops and parsley and serve.
