Learn how to turn apple juice into delicious and probiotic apple cider vinegar. It's really easy to make apple cider vinegar with a mother. It is a deliciously affordable alternative to store-bought ACV.

How to Make Apple Cider Vinegar

apple juice (pressed, not from concentrate)

apple cider vinegar (with mother, see notes)

Mix the apple juice with the vinegar in a glass jar. Shake the bottle of vinegar to mix the mother into the vinegar before measuring it out. 

Cover the jar with a breathable cotton cloth firmly attached with a rubber band or a mason jar ring to keep the fruit flies out. It&#8217;s important to let the vinegar have access to oxygen to properly ferment, so don&#8217;t cap it with an airlock or pickle pipe.

Leave the vinegar to culture in a dark location for at least 2 months. There&#8217;s no need to stir or check on the vinegar.

After 2 months, taste it. It should taste sour, like vinegar! If it&#8217;s not quite there, let it ferment for a bit longer.

Pour the finished vinegar into a bottle or a clean jar for long-term storage and use. Store at room temperature in a dark location. It will continue to develop the flavor as it ages. And the acidity is a great preservative. So homemade vinegar should last for several years.

I just had a quick question. I got organic apple juice but it is from concentrate. Can I still use it? If I can't use it, is there a reason? And any other options?

Hi Emillie,
I just wanted to clarify that you can use either 1/4 cup ACV with mother OR a piece of mother from your previous batch of ACV added to the juice and you are on your way to making your ACV. Correct?

The only other thing I have is a sourdough starter I take out of fridge and leave on counter to feed occasionally. Could it be from that? Also, should I put the whole disk in a batch or just cut a piece off? Thank you for all the great info.

Is apple juice with antioxidant: ascorbic acid ok to use?

Hi,
I just put 9 cups of apple juice with a peice of mother in a jar. When do i start seeing bubbles or other signs that fermentation has started? when I made my previous batch of ACV with actual apples and sugar, I started to see the bubbles after 24 hrs. This is my first time making it with apple juice that's why I was wondering when I would start seeing  the first signs. Are there signs I should be watching for if the fermentation is not working at all? Or there maybe other issues?

Thank you for your response. I had the mother stored in vinegar for the past six months and I just started this batch with apple juice and the mother sank to the bottom of the jar, I am not sure if thats ok. I have it covered with cloth.I guess I will be patient and hopefully it turns out good.

Homemade Apple Cider Vinegar

apple cores

In a sterilized jar, add the sugar and apple cores. Give it a stir, add a lid with either cheesecloth or a coffee filter on top, and set in a warm place in your pantry for two weeks.

Compost the apple cores at this point, and allow the mixture to ferment for an additional two weeks. 

The vinegar is ready when it is tangy and tastes like vinegar to your liking.

Make your own Apple Cider Vinegar at home! It is a great way to use or preserve excess apples, or a zero-waste solution to use unwanted apple scraps like skins or cores! Apple cider vinegar is easy to make, and is healthy, delicious, fermented, and packed with probiotics.

apple chunks,

tbsp sugar, per 1 cup filtered water OR

sugar, per 1 gallon of filtered water

Wash and chop the apples into chunks, or gather collected apple scraps (which can be saved in the freezer over time) and add them to your jar or other large fermenting vessel until it filled about halfway full.

Pour lukewarm filtered water over the apples into the container until it is almost full, but measure/note the total amount of water added.

Stir in sugar in ratios of 1 tablespoon of sugar per cup of water added, or for larger batches, 1 cup of sugar per gallon of water added.

Optional: Add a splash of finished organic apple cider vinegar (e.g. store-bought) to inoculate the culture and encourage fermenting.

Stir combined ingredients until thoroughly mixed, and cover with breathable material.

Store in a dark location around 70 to 75 degrees F for two weeks to ferment, and stir everyday to prevent mold from forming on top. If needed, add another layer of material like a dark towel on top of the container to block light.

After two weeks, strain and reserve the liquid into a similar sized container and cover again. Compost the spent fruit.

Move the covered container of liquid to a location that is out of the way to continue long term fermentation. Maintain dark. A cooler &quot;room temperature&quot; at this stage is okay, but do not refrigerate yet.

After one month, sample the vinegar to see if it is finished fermenting and tart to your liking. If needed, allow it to continue to ferment for a total of two to three months.

Once it is fermented to your desired flavor, transfer the apple cider vinegar into bottles with lids (or swing top bottles). Store at room temperature or in the refrigerator, and enjoy!

Properly fermented apple cider vinegar should &quot;stay good&quot; for over a year - as long as it does not have visible mold, or a strong and unusual flavor or appearance.
