Salisbury steak recipe that turns boring ground beef into a gourmet meal served with a delicious mushroom sauce.

Salisbury Steak

beef (90% lean, ground sirloin or chuck)

breadcrumbs

salt

black pepper

soy sauce

olive oil

unsalted butter

onion

brown mushrooms (½-inch thick slices)

garlic

tomato paste

all-purpose flour

balsamic vinegar

beef stock

parsley

Mix the Beef

In a medium bowl gently mix the ground beef, breadcrumbs, egg, salt, pepper, and soy sauce until just combined, do not overmix.

Form the Patties

Divide the beef mixture into 4 even mounds. Form into ½-inch thick oval patties, about 5-inches long and 2 ½-inches wide. Cover and chill the patties in the refrigerator for 15 minutes.

Prepare the Vegetables

Cut the onion into ¼-inch thick slices. Cut the mushrooms into ¼-inch thick slices. Mince the garlic. Set aside to use for the sauce.

Heat the Pan

Heat olive oil in a 12-inch cast iron skillet or nonstick pan over medium-high heat. Once the oil is hot, add the beef patties.

Cook the Meat

Cook until golden brown, 3 to 4 minutes. Flip and reduce the heat down to medium. Cook until the internal temperature reaches 140 to 145ºF (60 to 63ºC) for medium-well, or 150 to 155ºF (65 to 68ºC) for well-done, about 3 to 5 minutes. There will be some carryover cooking of the meat after resting. Transfer to a clean plate.

Cook the Vegetables

Carefully wipe the pan clean or keep the drippings for a more flavorful sauce. Heat the butter in the skillet over medium heat. Once melted add the onions. Saute until softened, about 3 minutes. Add the mushrooms, salt, and pepper. Saute until the mushrooms are tender, 3 minutes. Add the garlic and saute for 30 seconds.

Thicken the Sauce

Add the tomato paste and flour, stir and cook for 30 seconds. Add the balsamic vinegar, stir and cook for 15 seconds. Slowly pour in the beef stock, stir and cook until thickened, about 2 minutes.

Warm the Steaks

Place the steaks back in the pan, turning to coat in the sauce to warm.

Simple Sautéed Red Cabbage

red cabbage,

Bring a large pan to medium high heat and add olive oil,  red cabbage, salt, and pepper.

Reduce heat to medium low and cook ~ 50 minutes (for super soft cabbage), stirring occasionally so that nothing sticks or burns to the pan.  OR cook ~ 20 minutes for medium soft cabbage.

If cabbage starts to dry out, add water in ½ cup increments.

Start by boiling your eggs for 6 minutes. 

Afterwards, place them into an ice cold bowl of water and allow the eggs to chill for 5 minutes.

Beef Time. Add a good drizzle of veg oil to a frying pan. Add your beef and break it up with a spoon.

Finely chop your ginger, garlic and slice your spring onions. Add them to the pan once the beef is nice and crispy. Add your soy sauce, chilli flakes (save a pinch for later), sesame oil and mix together.

Add your chicken stock to a saucepan. Once the stock is hot, add your egg noodles. When the noodles have softened, add your pieces of pak choi to the saucepan. Mix everything together. Once the pak choi has cooked through, it’s assembly time.

Add your noodles to a bowl, spoon in a few ladles of stock followed by the pak choi. Add the beef to your bowl and one boiled egg, cutting it open to reveal that runny yolk. Sprinkle some chilli flakes over the top and repeat for each bowl. Now, tuck into to this warming and tasty dish.
