African Peanut Soup

chicken breast

Tbsp. Coconut Oil

Tbsp. minced ginger

onion

red pepper

jalapeños ((seeds removed and minced))

Tbsp. minced garlic

Tbsp. coriander

cumin

sweet potato ((approximately 1.5lbs., peeled and cut into half inch pieces()

tomato

chicken broth

peanut butter

spinach

cilantro

peanuts

Salt and fresh cracked pepper

Melt coconut oil in a large pot over medium-high heat. Cook chicken for 5-6 minutes until starting to brown on all sides. Remove and set aside.

Sauté onion and red pepper for 2 minutes until starting to soften. Add jalapeño, garlic, ginger, coriander and cumin and continue cooking 2-3 minutes.

Add sweet potato, tomato, and broth. Lower heat and simmer for 15-20 minutes. Stir in peanut butter and chicken and simmer another 15 minutes. Add peanuts, spinach, cilantro, and season with salt and pepper to taste.

Warming fresh ginger, jalapeño, cumin and plenty of garlic make a spicy base for this creamy, sweet-savory African peanut soup recipe.

tomato paste

(14 ounces) can crushed tomatoes

chicken stock

potato,

(14 oz) can chickpeas, drained

kale, roughly chopped

poached

tsp sat (to taste)

peanuts, crushed

cilantro, chopped (optional)

In a large pot heat olive oil over medium heat

Add onions and sauté until softened, about 3-4 minutes.Add in ginger, jalapeno and garlic and stir until fragrant about 1 min

Add the pepper, cumin and tomato paste and cook for another 2 minutes, stirring, until paste darkens.Add the crushed tomatoes, stock, sweet potatoes, chickpeas and peanut butter

Bring to a boil and stir until fully combined

Turn the heat down to low and simmer for 15 minutes, until sweet potatoes are tender.Add in kale and shredded chicken and cook for another 5 minutes

Depending on how salty your stock and/or peanut butter was, it may not need anymore salt

If you use low sodium stock and salt-free peanut butter, it will need a full teaspoon salt, maybe more

Adjust to your own liking.Serve warm topped with cilantro and crushed peanuts

Healthy African peanut soup with rice, based on a traditional West African recipe that’s packed with protein, vitamins and, best of all, flavour.

vegetable broth

½ medium courgette ((zucchini))

garlic

soy sauce

hot sauce

0.2 inches ginger, fresh ((0.2 inches = 0.5 cm = ½ tbsp powdered ginger))

Prepare the brown rice according to package instructions.

Bring the vegetable broth to the boil.

Cut the onion, carrot and courgette and add them to the broth.

Add the garlic and ginger to the broth as well.

Add the peanuts.

Add the tomato paste and peanut butter to the mixture.

Add the soy sauce last but check it’s not already too salty.

If you like it spicy add the hot sauce.

Let it simmer nicely until the rice is ready.

Serve in a bowl, eat. Yum!

- 150g brown rice (1 cup)
- 700ml vegetable broth (3 cups)
- ½ red onion
- 1 small carrot or ½ of a big one
- ½ of a small courgette or ¼ of a big one
- A small handful of peanuts
- 3 tbsp tomato paste
- 3-4 tbsp peanut butter
- 1 garlic clove
- 2 tbsp soy sauce
- A few dashes hot sauce

Optional:
- 0.5cm of ginger (½ tbsp of powdered ginger)

Directions:

- Prepare the brown rice
- Bring 700ml of vegetable broth to the boil
- Cut the onion, carrot and courgette and add them to the broth
- Add the garlic and ginger to the broth as well
- Add the peanuts
- Add the tomato paste and peanut butter to the mixture
- Add the soy sauce last but check it’s not already too salty
- Let it simmer nicely until the rice is ready
- Serve in a bowl, eat

Superb African Peanut Soup | Hurry The Food Up

Rich and spicy peanut soup is an ultra comforting and flavorful dish that everyone will love. The pantry staple ingredients make this hearty soup easy to prepare in just 30 minutes.

Spicy Peanut Soup

onion,

garlic,

ginger

sweet potato,

red chili flakes

chickpeas,

kale,

1/2-1 teaspoon salt, to taste

brown or white rice

chopped cilantro

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 3-4 minutes, until translucent. Now add the garlic and ginger, and cook for 1 more minute, until fragrant. Add the diced sweet potato and cook for 2 more minutes, stirring constantly.

Add the cumin, chili flakes, tomato paste, broth, peanut butter and chickpeas to the pot. Stir very well, until the tomato paste and peanut butter have mostly dissolved into the broth. Cover the pot and bring to a boil, then lower heat to a simmer and cook for 10-15 minutes, until the sweet potatoes have softened.

Once the sweet potatoes have softened, use a large wooden spoon to mash some of the sweet potatoes against the side of the pot, which will help thicken the soup.

Add the chopped kale, stir and cover the pot. Simmer for another 5-10 minutes, until the kale is tender. Taste; add more salt if needed or extra chili flakes for more spice.

Serve immediately with a scoop of rice, chopped cilantro, peanuts, hot sauce or more chili flakes, if desired. Enjoy!

Leftovers will keep for up to 4 days in the refrigerator or it can be frozen for up to 3 months.

Instant Pot African Peanut Stew

Tbsp vegetable oil

onions (chopped)

Tbsp ginger (minced)

salt

tsp black pepper powder

Tbsp curry powder

cayenne pepper

dry white wine

chicken broth ((about 1 ½ can))

lbs boneless skinless chicken thighs

potatoes

14.50 oz diced tomatoes

peanut butter (preferably creamy natural)

baby spinach (coarsely chopped)

cilantro (to garnish)

Select the Saute function and pre-heat the Instant Pot.

Add oil to the pre-heated inner pot of Instant Pot and allow it to heat up.

Stir in onions, garlic, ginger and saute till soft, about 2 minutes.

Add salt, black pepper, curry powder and cayenne pepper, stirring until fragrant about 15 to 30 seconds. *

Press Cancel.

Deglaze with white wine. Stir to remove any brown bits. There should be nothing stuck to the bottom of the inner pot.

Once deglazed, add chicken and stir to coat with spices.

Stir in broth, sweet potatoes, tomatoes and peanut butter.

Close the lid and pressure cook on High Pressure for 4 minutes.

Select Cancel and open the Instant Pot lid.

Stir in spinach until wilted.

Garnish with cilantro.

Serve with couscous, cornbread or crusty French bread.
