Air Fryer Gammon - did you know you can cook your gammon joint in your air fryer? It is easy and makes wonderfully tasty ham!

Air Fryer Gammon

900 g (2 pounds) gammon joint

tbsp redcurrant jelly (or smooth cranberry sauce)

tbsp wholegrain mustard

tbsp cranberry juice or orange juice

Take the gammon out of the fridge and bring it back to room temperature before cooking.

Cut two large pieces of foil and place them in a cross shape on your countertop. Place the gammon in the middle and wrap with the foil until it is completely covered.

Preheat the Air Fryer for 5 minutes at 170°C (340°F). Place the foil covered gammon in the air fryer basket. Cook for 40 minutes.

The gammon is cooked when an instant read thermometer inserted into the thickest part reads 62 °C (145 °F). The temperature will rise a bit further when you add the glaze.

The ham should be easy to pierce with a knife (or the thermometer probe). If it is not cooked yet then continue to cook (covered) until it reaches the right temperature.

Prepare the glaze. Put all the ingredients in a saucepan, bring to a simmer and cook for a few minutes until the glaze reduces and becomes syrupy. Set aside.

Take the gammon out of the fryer. Peel back the foil and use a knife to remove the rind from the gammon joint, leaving a thin layer of fat. Use a sharp knife to lightly score the fat in a diamond pattern. You can stick cloves in each diamond before glazing if you like.

Liberally brush the ham with the glaze. Return to the air fryer for 5 minutes at 200°C (400°F). Brush with the glaze once again and repeat once or twice until the ham is crispy on top.

Transfer to a platter and rest for 10 minutes before slicing. Serve warm or cold.

Gammon joint in air fryer or a ham in an air fryer is a lot easier than you think. The small joint gammon and ham that I buy, doesn't require any pre-soak. It is also very important to note that this recipe is for a gammon joint or ham joint that has not had any pre cooking! The amount of tik tok and youtube videos I see, where this is not explained is unreal. You will find many cooks on the videos cooking a gammon joint that has already been pre cooked, this is standard in many countries. However in the UK, we have a lot of people following the same method with their uncooked gammon joints .... and then wondering why it is raw? 
The video and recipe below explains the process of cooking a gammon joint in the air fryer with two different weights. Again some of the videos on social media just say "small gammon joint." The issue with this, is that some "small gammon joints" are 750g and others up to 1.1kg. So there is a difference in cooking time again! Once your gammon has rested for a five minutes, I check the internal centre of it with my thermometer. I personally prefer it to get to around 75 degrees centigrade. Others say 60 degrees centigrade is fine. That said, I've always gone with 75 degrees centigrade. You do you, but I don't mess about with pork or chicken temperatures when cooking. 
So I hope that this short guide will give you a good idea of how to air fry a ham or gammon joint. Because it certainly is a quick and easy way of knowing how to cook a gammon joint, compared to many other methods.
Do I glaze my ham or my gammon? Sometimes yes. However for the purpose if this recipe, I have left unglazed but explain the process. Want a glaze for the last five minutes of cooking? Marmalade is good, as is a glaze of 2 tbsp honey, mixed with 1 tbsp of dijon mustard. 
Oh, and no I don't use foil or anything else in my air fryer. Cleaning is easy for me, as I get a bowl of hot soapy water at the ready, along with a good amount of bicarbonate of soda (ideal for using bicarbonate of soda that is out of date for cooking). Once my cooking in the air fryer is done, I immediately place the air fryer rack and pan into the hot water. All residue seems to come off nicely and without hassle. 

Gammon Joint In Air Fryer

I don&#8217;t find I need to pre rinse or soak my gammon or ham joint.

I also like to remove the rind, leaving a little fat underneath.  

For a 750g gammon or ham joint, I place in my air fryer at 180 degrees centigrade for 20 minutes.  Then after 20 Minutes, I turn it over and place back in the air fryer at 180 degrees centigrade for 20 minutes.  If adding a glaze, I remove for the last five minutes, add the glaze and then pop back in the air fryer for five minutes.

For a 1.1kg gammon or ham joint, I place in my air fryer at 180 degrees centigrade for 25 minutes.  Then after 25 Minutes, I turn it over and place back in the air fryer at 180 degrees centigrade for 25 minutes.  If adding a glaze, I remove for the last five minutes, add the glaze and then pop back in the air fryer for five minutes.

I then place on a plate for five minutes covered in foil.  After five minutes, I take my meat thermometer and make sure it is around 75 degrees centigrade.  This is my preferred temperature,  and each time my ham or gammon has been cooked properly.
