Kukuri Bhindi, called Kurmure Bhendi Bhaja in Bengali, is sliced okra coated in spices and fried until crunchy. &nbsp;This crispy fried okra is so good, you cannot stop eating it!

Kurkuri Bhindi / Crispy Fried Okra Recipe

10.5 oz Okra (Bhindi)

Rice flour

Semolina (Sooji/Rava) (fine)

tbsp Nigella seeds (Kalonji)

tsp Fennel Seeds (Saunf)

(adjust

tsp Ground Turmeric (Haldi powder)

tsp Kashmiri red chili powder (adjust

Water

Oil (for deep-frying (1 tbsp for air fryer))

Lime wedges

Wash okra and then pat dry with a kitchen towel. Using a sharp knife, slice the okra lengthwise in half or quarters depending on their size.&nbsp;

In a medium-sized mixing bowl, combine the flour, semolina, nigella seeds, fennel seeds, salt, turmeric and chili powder. Whisk to combine and then pour in the water to make a thick batter.&nbsp;

Add the sliced okra to the batter and toss it around to coat all the slides. Set aside for 15 minutes.&nbsp;

When ready to deep-fry, place a heavy bottomed pan over medium-high heat. Pour in the oil to a depth of about 1 inch. Have a plate layered with a kitchen towel ready.&nbsp;

Depending on how big your pan is, add the okra slices carefully, without overcrowding the pan. Tossing and turning, fry the okra for about 5 minutes or until golden brown in color. Remove from the pan using a slotted spoon and place on the kitchen towel. The okra tastes best when served immediately.&nbsp;

For Deep-frying:

Place half of the okra slices in the air fryer basket, spreading them out as much as possible (if you have a large air fryer, you could do all at once). Spray some oil on the spread okra slices.&nbsp;

Cook at 330˚F for 10 mins. Remove and shake the okra, then cook at 350˚F for about 2-5 mins until crispy.&nbsp;Serve immediately.&nbsp;

Crispy Air Fryer Okra (Kurkuri Bhindi)

okra (rinsed, dried and cut in half lengthwise)

avocado oil

salt (adjust

turmeric

red chili powder

coriander powder

cumin powder

amchur ((dry mango powder))

chaat masala (see notes for substitute)

besan ((chickpea flour)

Prepare Okra

Rinse okra well. Dry it completely, then cut each okra in half, lengthwise. Trim off the crown and tips.

Season Okra

Combine okra, oil, salt, spices and chickpea flour in a large mixing bowl and toss well until the okra gets coated with spices and flour.

Air Fry

Preheat the air fryer at 360°F for 2 minutes. When ready, spread the okra in the fryer basket in a single layer. Depending on the size of your air fryer, you may have to cook okra in 2 or 3 batches. Cook for 12 minutes, shaking the basket halfway through.Note: If you like your okra extra crispy, shake the basket and cook it for another 1-2 minutes.

Season the okra as per instructions above. Cook in a preheated oven at 400°F for 20-25 minutes, flipping halfway though.

This recipe for okra in air fryer is deliciously satisfying and perfect for the whole family!

Crispy Air Fryer Okra

(250 grams) Okra

(50 grams) Gluten Free panko breadcrumbs

tsp Smoked paprika

tsp oregano

tsp Ground coriander

Salt

Preheat the air fryer to 350 F / 180 C.

Wash the okra and pat dry.

Remove the ends of the okra, but do not cut into it.

In a bowl, beat the egg.

In a separate bowl, mix the panko breadcrumbs, paprika, oregano, coriander and salt.

Then, dip the okra into the egg wash and let some of the excess drip off.

next dip the okra into the panko mixture, turning over until well coated. Set coated okra aside on a tray or plate and continue until done.

Place okra in a single layer inside the air fryer basket and cook for 5-6 mins per side. Use tongs to turn and cook for an additional 5-6 mins until done (bigger and tougher okra may take a little longer).

Okra is breaded with breadcrumbs and cornmeal to get that same fried okra taste you know and love!
