Albondigas Soup Recipe

(16 ounces) can diced tomatoes (undrained)

Meatballs: Combine all ingredients together thoroughly. Form 20-24 tight meatballs by rolling between your palms (we made ours about 1 1/2 inch wide). Brown in a hot pan for a few minutes on each. Set aside.

In a large pot, combine chicken broth, carrots, celery, tomatoes, cumin, oregano, and cilantro leaves.

Bring to a boil, and reduce heat to a mild simmer for 10 minutes.

Drop meatballs and potatoes in the soup and slightly boil so that meatballs cook quickly. Return to simmer and cook another 20 minutes. Salt and Pepper to taste. Enjoy warm.

This albondigas soup is made with beef and rice meatballs which are simmered in a seasoned tomato broth along with potatoes, carrots and zucchini. A hearty soup that both kids and adults will enjoy!

Albondigas Soup

beef (I use 90% lean)

white rice

garlic

cilantro leaves (chopped)

cumin

salt

pepper

olive oil

onion (diced)

carrots (peeled, quartered and sliced)

potatoes

beef broth

can diced tomatoes (do not drain)

tomato sauce

zucchini

For the meatballs. Place the beef, rice, garlic, egg, cilantro, cumin, salt and pepper in a large bowl. Mix until thoroughly combined.

Roll the meat mixture into 3/4 inch sized meatballs. Place the meatballs on a tray.

For the soup. Heat the olive oil in a large pot over medium heat. Add the onion and carrot and cook for 3-4 minutes.

Add the garlic and cook for 30 seconds. Add the potatoes, beef broth, tomatoes, tomato sauce, cumin and oregano to the pot. Bring to a simmer.

Simmer for 10 minutes. Drop the meatballs into the soup and simmer for an additional 10 minutes.

Add the zucchini and cook for 5 minutes more. Season the soup with salt and pepper to taste.

Sprinkle with chopped cilantro, then serve.

Remove the pan from the heat and let it cool for 5 minutes before serving with freshly chopped cilantro and lime wedges.

Heat vegetable oil in a skillet over medium high heat. Fry the tomato and onion until softened, but not browned. Allow to cool to room temperature.

Mix the softened vegetables with the ground beef, mint, cilantro, egg, bread crumbs, salt, and pepper. Allow it to cool in the refrigerator while you slice the vegetables.

Form meat mixture into small, firm meatballs.

Meanwhile, bring beef broth to boil in a large Dutch Oven or soup pot and reduce heat to a simmer.

Drop meatballs gently, one at a time, into the simmering broth.

When the meatballs have floated to the top, add the sliced huisquil and julienned carrots, and simmer until the vegetables are tender.

Add all the ingredients for the meatballs to a large bowl. Mix together with your hands until just combined. (Try not to overwork the meat too much, just until you feel like all the ingredients have been evenly dispersed throughout the mixture.)

Roll the mixture into 24 meatballs and set aside. (I used a small cookie scoop to gather about 1 heaping tablespoon of the meat mixture, and then formed it using my hands.)

Heat a large Dutch oven or pot over medium-high heat. Add the olive oil, celery, carrots, onions, and 1 teaspoon of salt. Stir to combine and cook for 8 minutes, until the onions have softened.

Add the tomato paste, dried oregano, and ground cumin. Mix together until the tomato paste has fully coated all of the vegetables.

Add the broth and stir to combine. Bring to a boil then reduce the heat to low.

Carefully drop the meatballs into the pot one by one. Bring the soup back to a simmer, then cover and cook for 15 minutes.

Add the green beans and potatoes. Cover and cook for 15 more minutes.

Add the cilantro, mix together, and taste. Season with more salt if necessary.

Serve and enjoy!
