Imagine an amped-up chicken soup, with chicken thighs, chickpeas, tomatoes and vegetables: This is Mediterranean comfort food at its best, via Algeria. Although it’s usually made with mutton or lamb, we made our Algerian-inspired version with chicken, and used bulgur instead of noodles or freekeh (cracked green wheat).

Chorba Soup with Bulgur

chopped

1 stalk, chopped

tbsp (30 ml) olive oil,

lb (225 g) boneless chicken thighs, diced

tbsp coriander

cinnamon

tsp black pepper

tsp turmeric

cayenne pepper

chicken broth

(28 oz/796 ml) diced tomatoes

(19 oz/540 ml) chickpeas, rinsed and drained

(90 g) fine bulgur wheat

(10 g) cilantro, finely chopped

In a large pot over medium-high heat, soften the vegetables in the oil. Add the chicken and spices. Continue cooking for 1 minute, stirring constantly. 

Add the broth and tomatoes. Bring to a boil, then simmer over medium heat for 30 minutes. Add the chickpeas and bulgur. Continue cooking for 15 minutes. Season with salt and pepper. 

Garnish with the cilantro and a drizzle of olive oil, if desired. Serve with <a href="https://www.ricardocuisine.com/en/recipes/8080-tuna-and-egg-brikas"target="_blank">Tuna and Egg <i>Brikas</i></a>.

Excellente soupe !  Je n'ai pas mis le poulet, une prochaine fois.  J'ai mis davantage de pois chiches. Très consistante... un vrai délice, goûteuse !

Excellent potage d’automne. Je n’ai pas mis de poulet cette fois-ci et c’était quand même délicieux 

WOW un vrai délice! Pour ma part, j'ai fait plusieurs supermarchés pour essayer de trouver du boulgour... sans succès! J'ai donc mis de l'orge à la place et le résultat est excellent! Une soupe très soutenante, nutritive et santé! 5/5 
Le mélange des épices est très bon. De plus, je n'ai mis qu'un seul oignon et 1 courgette seulement.
