Alice Waters&#8217; Winter Squash Soup Recipe

winter squash,

garlic, minced

chicken

heavy cream

Place the squash halves cut-side down on a baking sheet and bake for 45-50 minutes until soft.

Scoop out the flesh of the squash and set aside.

In a Dutch oven or large pot, heat the olive oil over medium-high heat.

Add the onion and garlic and sauté until the onion is translucent.

Add the roasted squash and broth, bringing to a boil.

Lower heat and let simmer for 20-25 minutes, until the squash is very tender.

Using an immersion blender or transferring the mixture to a blender, puree the mixture until smooth.

Return to the pot and stir in the cream, salt, and pepper.

In a large bowl, mix zucchini and salt. Let stand for 10 minutes.

Squeeze zucchini to remove excess liquid.

In a separate bowl, whisk flour, baking powder, paprika, and black pepper.

Stir in Parmesan cheese, parsley, eggs, milk, and olive oil.

Add zucchini to the flour mixture and stir until just combined.

Heat a large nonstick skillet over medium-high heat.

Drop 1/4 cup of batter onto the skillet and cook until golden brown, about 3 minutes per side.

Transfer pancakes to a baking sheet and keep warm in the oven.

Serve warm with fresh herbs and sour cream, if desired.
