These No-Bake Healthy Almond Joy® Bars are one of our fave recipes. They easy to make, freeze well &amp; are loaded with coconut oil &amp; other healthy ingredients.

No-Bake Healthy Almond Joy Bars (low carb, vegan, gluten free, AIP)

coconut oil

almond butter ((see Recipe Notes

cocoa

erythritol ((see alternative in Recipe Notes))

vanilla

coconut flakes

low carb sweetener

flavoring ((optional))

arrowroot powder

almond halves ((optional))

chocolate chips for drizzle ((optional))

Melt oil and nut / seed butter over low heat.

Stir in cocoa / carob (sifted if you like, but I have never bothered with this) and granulated sweetener and combine thoroughly.

Mix in remaining ingredients except for vanilla. Continuously stir until it slightly thickens, then remove from heat.

Stir in the vanilla.

Pour the mixture into an 8×8 pan and place in freezer to harden while you make the topping. If you don't have room in your freezer, the fridge will get it solid enough to work with.

Base

Melt oil in small pan and add coconut flakes. Stir.

Add remaining ingredients. Simmer and stir until it thickens a bit.

Once the chocolate is hardened, gently smooth the coconut mixture on top.

Place slivered or whole almonds on top (optional). Place bars back in the freezer until hardened. Again, the fridge will work, but it will take longer.

Slice into squares of desired size and enjoy! They'll be too hard to cut right out of the freezer so let them thaw a bit first.

Store in the refrigerator or freezer.

No-Bake Almond Joy Bars (Vegan, Paleo)

Line a standard loaf pan with parchment paper and set it aside. To prepare the crust, combine the almond meal, maple syrup, coconut oil, almond extract, and salt in a medium bowl, and stir well until a sticky dough is formed. Press it evenly into the bottom of the lined loaf pan, and set aside.

To prepare the coconut filling, combine all of the filling ingredients in the mixing bowl and stir well. Spread the coconut mixture over the crust, then use a spatula to smooth the top. Set aside.

To prepare the chocolate topping, combine all of the ingredients in the mixing bowl and use a whisk to create a silky smooth chocolate sauce. (If any of your ingredients are cold, this sauce will firm up. If that happens, simply place the bowl in a warm area or in a hot water bath briefly to liquify the ingredients again.) Pour the chocolate sauce over the top of the coconut layer and smooth the top with a spatula. Place the pan in the freezer to set until firm, about one to two hours.

Pull on the parchment paper to easily remove the solid bar from the pan, then slice into bars and serve directly from the freezer. These bars will soften fairly quickly if left at room temperature, so it's important to keep them chilled until ready to serve.

These homemade Almond Joy bars are made with only 5 ingredients - they are a simple homemade version that&#39;s light, tasty and easy to make!

Almond Joy Bars

Line a loaf pan with parchment paper. Set aside.

Mix the shredded coconut, melted coconut oil and honey in a large bowl until well combined and sticky.

Press the mixture into the prepared pan. Line the almonds evenly across the filling in 3 rows of 6. Press lightly to secure.

Chill in the refrigerator until completely firm, at least 2 hours or overnight

Once solid, lift from the pan using the parchment paper, and use a very sharp knife to cut into 18 equal squares.

Use a fork to dip each bar into the melted chocolate. Allow any excess chocolate to drip and place back on the parchment paper.

Refrigerate again until the chocolate sets, about 30 minutes. Keep refrigerated until ready to serve.

Pulse coconut in a blender a few times to make finer in consistency. This step is optional, but I like the end result more when it's done.

Melt coconut oil in microwave. Line an 8x8 square pan with parchment and set aside.

Stir together coconut, powdered sugar and coconut oil. Pour into prepared pan. Transfer pan to fridge or freezer to cool until set. Cut squares into 1"x 2.5" bars. Set pan back into freezer.

Melt dipping chocolate in the microwave for 1 minute, adding additional time in 20 second increments as needed.

Dip each bar into the melted chocolate.  I like to dip the whole bar, then set 2 almonds on top of the bar, spooning additional chocolate on top to cover them. Tap to remove excess chocolate and transfer to pan.

Return to fridge to cool &amp; set.

Once candy is set, you can let them come to room temperature before serving. I think they taste delicious both chilled and at room temp, but they taste more like traditional Almond Joys at room temp. Dipping candy in chocolate is infinitely easier when you use a handy Winton Dipping tool. I love mine!!

Store candy in an airtight container ideally in a place below 73 degrees F.
