In small bowl whisk to combine flour, baking soda and salt. Set aside.

Using 1 1/2 tablespoon cookie scoop drop by rounded spoonfuls onto parchment covered cookie sheets. Bake for 9-12 minutes. Allow to cool for ten minutes before moving to cookie cooling racks.

I substituted Splenda and they came out fine . I do find them to be bit dry, which maybe due to the substitution.

I just found this recipe and baked using almond flour. I baked them for about twelve minutes, rotating the pans half way through at 340 degrees.
They came out amazing! Love them, so soft and gooey with the chocolate and the subtle coconut flavor is wonderful. Thanks for the recipe.

I have made these cookies several times and they don't last long!! Delicious and so easy to make!!

Beth, freezing would probably not stop me. ? I wouldn't mind eating them frozen! They look delicious and tomorrow I am making a batch. Thanks for sharing the recipe.

I just made this cookie and I am so happy with the results. For all you other novice cookie makers 1/8 cup is 2 tablespoons. Knowing my oven bakes hot I baked them at 350 for 10 minutes and they turned out great! Thanks for a new cookie recipe that I will keep.

I made these wonderful cookies with gluten free flour for my wife, they turned out great. This is such a great receipt I tried substituting the chocolate chips and almonds for butterscotch chips and pecans. Wow! These are amazing too!

My husband said it’s the best cookie I’ve made. I like to bake, so that’s a huge compliment. Turned my oven down to 350 and baked 12 minutes.
Thank you for sharing!

Made these cookies last weekend and they were a HUGE hit at school! My administrator asked for a personal batch TWO DAYS IN A ROW! I'm currently working on a double batch to box and give as Christmas gifts to the administrative assistants and custodial staff! Thanks for sharing the recipe!

Followed directions exactly. Cookies taste pretty much like a typical chocolate chip cookie. Disappointed I didn't get that Almond Joy flavor.

I bake this recipe and was awesome.
I make another batch with white chocolate chips and turns out good. Thank you so much for sharing this. My friends love it too.

These are the best cookies I’ve made so far ! I’ve turned to mixing cookies and cakes instead of alcoholic beverages! My self rehabilitation ?thanks for sharing!!

I got 19 cookies, but that's ok. I think I just over filled the spoon. I've made these
twice during the pandemic-might need new clothes, lol. They are delicious!

I love having a stash of these in the freezer. I'm the only coconut lover in the house so I like pulling just one or two out for me after dinner! Fabulous!

My kids enjoyed these!! They asked for another batch!

This is perfect because I always end up eating way too many cookies!

These cookies look fantastic! There are two things I love in this life - cookies and Almond Joy. This is perfect for me. LOL

Cheat day is Saturday...... I can't wait to make these.

Cookies and almonds = my two favorite things to munch on! So glad I found this recipe; will definitely try this out! Thank you!

If I didn’t butcher everything I touch I would so try to make these :(

Okay, I totally have a soft spot for cookies and this recipe is making me so hungry now! I'll have to try these out next week.

I am so glad you have instructions for freezing and thawing these delicious cookies! Great info; can't wait to try these for myself!

I LOVE cookies and this one seems really yummy. Will surely try out your recipe.

These were delicious! I gave half the batch to my father, who (involuntarily) gave his last one to my sister. He will be getting more and she will be getting the recipe. We all thank you!

I made these cookies today, absolutely amazing. I have a new favorite cookie. One thing, my first batch I let bake for the 9 minutes and they were a little over done but still good, so next batch I baked for 6 minutes and they were perfect. I can't stop eating them, OMG.

These are amazing!!! I followed the recipe exactly and they turned out perfectly.

Regardless they're still delicious. I have to bring something to work tomorrow and it's almost midnight and I'm making another batch to take. This is my 4th since I discovered your cookies. Thanks again!

Just made these. Absolutely yum (and I don’t even like Almond Joys because I’m not fond of coconut). Doubled the recipe because I’ve been making monthly cookies to send to my father, my brother and my son as last year’s Christmas present. I’m sure they’ll love them. Followed the recipe exactly and consider them one of my top five favorite cookies. Thanks so much.

Saturday night, hubby watching hockey.
I just saw a post on FB about these cookies....so, i just made them...quick and easy does it...just came out of the oven, so now the moment of truth lol
Pretty good! Id make them again!
Thanks!

Almond Joy as a cookie? It can't get any better. Love how easy these were to make, but didn't love how many I ate after baking them. ;)

Almond joy cookies are the greatest idea!! They were super easy to make & tasted so delicious!! They will definitely be part of our cookie exchange!

These almond joy cookies are so simple and easy to make! The best cookie recipe, my kids love these.

Oh my gosh, I can't stop with these. Almond Joy are my fave candy bar!

Wow - great recipe! We made them and they tasted like an Almond Joy, so yummy!

Definitely adding this to my holiday baking line up! These look delicious and will make great gifts this year!

This is one of my favorite recipes, everyone always raves!

I am all about small batches on a delicious dessert like this. If not, I would gain 80 pounds over the holidays when I bake all the cookies LOL!

Small batch and delightful! Just love these cookies and make them all year!

These Small Batch Almond Joy Cookies are look so fun and tasty!

I cannot resist these delicious cookies! Love that i can freeze them and bake a few when I have a craving.

I love cookies and these are incredible! Such an amazing recipe. Thank you so much for sharing! :)

Almond Joy candy bars are one of my husbands favorites. I made him these cookies and he loved them!

Made this for the family and it were a hit!

I just found this recipe two days ago. So far I have made 4 batches. I took them to my group who devoured them, my neighbor who said they are the best cookies they have ever eaten. The recipe is perfect, the cookies come out perfect every time and they are so easy. I cooked them for the recommended 12 minutes perfection. The only problem I see is that I may put on a lot of weight as my husband and I ate the first batch all 24 of them. I have already forwarded the recipe to all of my friends.
One of my friends does not like coconut but she said they were delicious and so glad she tried them. If I could give 100 stars I would. Best cookie recipe ever.

I’m loving these cookies.everything goes perfectly together.

I was looking for a way to use up Almond Joys we had after Halloween and slightly modified this terrific recipe to turn them into cookies! If anyone else has extra Almond Joys and wants to try it, follow the recipe with these two adjustments:
- substitute 1 1/2 cups chopped almond joys for the 1 cup of coconut flakes.
( I used the mixer when I added these to incorporate into the batter)
- use 1 cup of chocolate chips instead of 1 1/2 cups (because the almond joys have some chocolate)

Thanks for the recipe

Wow!!! Seriously the best cookie EVER! I love that it’s small batch too...these are dangerous.?

These were absolutely delicious! Coconut taste wasn't as prominent as I had hoped, but that might have been due to the age of the coconut flakes. Cookies were done immediately at the 9 minute mark; any more time and they would have burned in the oven. Overall, these cookies were definitely worth making!

Thanks so much for sharing this recipe! My boyfriend and I love these cookies!! Quick question, as I noted in your blog you mention to use unsalted butter - which I did. In the recipe however, it just calls for 1 stick of butter (it does not specify salted or unsalted). So with this said, in the nutrition facts, is the sodium reflective of a recipe with unsalted butter or salted butter would you say?

I've been a cookie maker for over 55 years, and this is one of the best cookies I've ever made! They turned out exactly like your picture, and I love the small batch part! I knew when the uncooked dough was delicious, it was a winner! Thank you for such a great recipe!

Those cookies are PERFECTION! Many thanks from my tiny kitchen in Paris, where I have been munching away on those non stop for the past few days.

This is my new favorite cookie recipe. These cookies were absolutely amazing and everyone loved them. The combination of coconut, almonds and chocolate was perfect. Since we have a toddler in the house I did soften the almonds in water so I could chop them in my blender. In my oven baking for 10 minutes was just right.

These cookies are PERFECTION! Followed the recipe, only used unsweetened coconut Watched them closely, but bake an extra 2 minutes for more crispiness. YUMMY!

Wow! Sounds like a great recipe Beth. I will be making them, but instead use milk chocolate chips AND whole almonds....many comments here, i didn’t read if anyone chose to use whole almonds?!? I will try. Thank you much for this!

I just baked these cookies - they are on the cooling rack, but of course ate a few after I took them off the cookie sheet. These are really good! I baked 1st pan for 9 minutes. Since it’s in the 90s in SW FL today, I scooped out the rest of the dough onto wax paper on a small pan and placed it in the refrigerator until cookie sheet was cooled down from 1st batch. Since these cookies were cooler, I baked them 10 minutes - they came out just like your picture. So I will probably refrigerate the scooped cookie dough for 10-20 minutes before baking the next time I make them. There will definitely be a next time! Thank you for sharing.

These are delicious! I will make these again and again. Mine took 17 min at 350 but I used a fairly large cookie scoop because I like dense uniformly shaped cookies. They were beautifully browned on the outside with a soft chewy center. The toasted coconut and almond flavor was outstanding. The only change I made was to add a bit of coconut extract in addition to the vanilla. Thank you for the wonderful recipe. 😊

I’d like to make and overnight mail these to my sister in another state. I’ll pack them really well. But do you think they’ll survive or be overcome by the heat and fall apart?

This is the third time I have made this recipe and again it’s a hit! Thank you so much for a wonderful recipe!!

These were delicious, and I had some leftover dough! How long do you think the dough can be frozen for? I was thinking one week, but I want to know what you think! Great job, and if you could please answer my question that would be great! 😊

Oh my goodness, these cookies are amazing!! I only had unsweetened coconut and chopped up some whole almonds but otherwise followed the recipe exactly. Made them last night and I already ate 5 of them. I actually think they are even better the 2nd day! Thank you for such a delicious recipe!

Usually my cookies do not come out well. These were absolutely delicious and easy to make. Thank you Beth!!

Fantastic!!! My whole family raved! I’m making more tonight. They just can’t get enough!!!

I made these for the first time today after reading many reviews. I made them as per the posted recipe. I wonder if I might cut back on the chocolate chips next go around as the chocolate flavor overpowered the coconut flavor until there was nothing left of the cookie in your mouth and then, voila, the coconut flavor cooked in. I refrigerated my dough for about 1/2 hour prior to baking. I baked my cookies for about 11-12 minutes, turning them and keeping my eye on them. I ended up with a crisp edge and a soft center. Lovely. I also would like to share that I weigh my rolled cookie dough in order to achieve a consistent size finished cookie. The finished cookie presents itself nicely when they're a uniform size. I started with a 20 gram (3/4 oz.) ball and after eating one after the test-run decided to drop it down to 15 grams as they are very rich. I think this is a great cookie to give as a gift or kept in the freezer for those of you who have late night cravings! I'll make them again for sure! :-)

I made these tonight and they are SO good! I was worried because the dough was super stiff when mixing in the chocolate chips, etc., but the cookies turned out so moist and delicious. This is a keeper!

I made these with dark chocolate chips. Absolutely fab!!!!! I’m adding these to my Christmas cookie baking. Thx

THESE. ARE. AMAZING. These cookies literally just came out of the oven and I am obsessed. Don’t skip putting the chocolate and extra almonds on top- they are delicious either way but you will not be sorry taking the extra step! They are not too sweet and have perfect soft texture with a little crunch from the almonds. I did use almond extract instead of vanilla and they are seriously yummy. This is the epitome of what a dessert should be. You can taste every ingredient without getting hit with straight sweetness. I will make these again and again!

These cookies are awesome! My daughters can’t stop eating them! I am always looking for healthier cookie recipes and this one was perfect! I hate to see any recipe labeled healthy that includes refined sugar and/or white flour- makes no sense! We will definitely be making these again!
