These delectable cookies will remind you of one of your favorite candy bars. They are the perfect blend of sweet coconut, semi sweet chocolate and sliced almonds .  They can be baked and frozen ahead of time.

Small Batch Almond Joy Cookies

all purpose flour (1 cup plus two tablespoons)

baking soda

salt

butter softened (1 stick)

sugar

brown sugar

vanilla extract

chocolate chips

sweetened coconut flakes (shredded coconut)

almonds

In small bowl whisk to combine flour, baking soda and salt. Set aside.

Using mixer cream butter and sugars. Add vanilla and egg and mix just until incorporated. Slowly blend the dry mixture into the creamed mixture. Stir in chocolate chips, coconut flakes and sliced almonds.

Using 1 1/2 tablespoon cookie scoop drop by rounded spoonfuls onto parchment covered cookie sheets. Bake for 9-12 minutes. Allow to cool for ten minutes before moving to cookie cooling racks.

I substituted Splenda and they came out  fine . I do find them to be bit dry, which maybe due to the substitution.

I just found this recipe and baked using almond flour. I baked them for about twelve minutes, rotating the pans half way through at 340 degrees.

I just made this cookie and I am so happy with the results. For all you other novice cookie makers 1/8 cup is 2 tablespoons.  Knowing my oven bakes hot I baked them at 350 for 10 minutes and they turned out great! Thanks for a new cookie recipe that I will keep.

I made these wonderful cookies with gluten free flour for my wife, they turned out great. This is such a great receipt I tried substituting the chocolate chips and almonds for butterscotch chips and pecans. Wow! These are amazing too!

My husband said it’s the best cookie I’ve made. I like to bake, so that’s a huge compliment. Turned my oven down to 350 and baked 12 minutes.

Followed directions exactly.  Cookies taste pretty much like a typical chocolate chip cookie.  Disappointed I didn't get that Almond Joy flavor.

I made these cookies today, absolutely amazing.  I have a new favorite cookie.  One thing, my first batch I let bake for the 9 minutes and they were a little over done but still good, so next batch I baked for 6 minutes and they were perfect.  I can't stop eating them, OMG.

Just made these. Absolutely yum (and I don’t even like Almond Joys because I’m not fond of coconut).  Doubled the recipe because I’ve been making monthly cookies to send to my father, my brother and my son as last year’s Christmas present. I’m sure they’ll love them. I just found this recipe two days ago. So far I have made 4 batches.  I took them to my group who devoured them, my neighbor who said they are the best cookies they have ever eaten.  The recipe is perfect, the cookies come out perfect every time and they are so easy.  I cooked them for the recommended 12 minutes perfection.  The only problem I see is that I may put on a lot  of weight as my husband and I ate the first batch all 24 of them.  I have already forwarded the recipe to all of my friends.
One of my friends does not like coconut but she said they were delicious and so glad she tried them.  If I could give 100 stars I would. Best cookie recipe ever.

I was looking for a way to use up Almond Joys we had after Halloween and slightly modified this terrific recipe to turn them into cookies!  If anyone else has extra Almond Joys and wants to try it, follow the recipe with these two adjustments:
- substitute 1 1/2 cups chopped almond joys for the 1 cup of coconut flakes. 
  ( I used the mixer when I added these to incorporate into the batter)
- use 1 cup of chocolate chips instead of 1 1/2 cups (because the almond joys have some chocolate)

These were absolutely delicious! Coconut taste wasn't as prominent as I had hoped, but that might have been due to the age of the coconut flakes. Cookies were done immediately at the 9 minute mark; any more time and they would have burned in the oven. Overall, these cookies were definitely worth making!

Thanks so much for sharing this recipe!  My boyfriend and I love these cookies!!  Quick question, as I noted in your blog you mention to use unsalted butter - which I did. In the recipe however, it just calls for 1 stick of butter (it does not specify salted or unsalted).  So with this said, in the nutrition facts, is the sodium reflective of a recipe with unsalted butter or salted butter would you say?

This is my new favorite cookie recipe. These cookies were absolutely amazing and everyone loved them. The combination of coconut, almonds and chocolate was perfect. Since we have a toddler in the house I did soften the almonds in water so I could chop them in my blender.  In my oven baking for 10 minutes was just right.

These cookies are PERFECTION! Followed the recipe, only used unsweetened coconut Watched them closely, but bake an extra 2 minutes for more crispiness. YUMMY!

I just baked these cookies - they are on the cooling rack, but of course ate a few after I took them off the cookie sheet. These are really good! I baked 1st pan for 9 minutes. Since it’s in the 90s in SW FL today, I scooped out the rest of the dough onto wax paper on a small pan and placed it in the refrigerator until cookie sheet was cooled down from 1st batch. Since these cookies were cooler, I baked them 10 minutes - they came out just like your picture. So I will probably refrigerate the scooped cookie dough for 10-20 minutes before baking the next time I make them. There will definitely be a next time! Thank you for sharing.

These are delicious! I will make these again and again. Mine took 17 min at 350 but I used a fairly large cookie scoop because I like dense uniformly shaped cookies. They were beautifully browned on the outside with a soft chewy center. The toasted coconut and almond flavor was outstanding. The only change I made was to add a bit of coconut extract in addition to the vanilla. Thank you for the wonderful recipe. 😊

Oh my goodness, these cookies are amazing!! I only had unsweetened coconut and chopped up some whole almonds but otherwise followed the recipe exactly. Made them last night and I already ate 5 of them. I actually think they are even better the 2nd day! Thank you for such a delicious recipe!

I made these for the first time today after reading many reviews.  I made them as per the posted recipe.  I wonder if I might cut back on the chocolate chips next go around as the chocolate flavor overpowered the coconut flavor until there was nothing left of the cookie in your mouth and then, voila, the coconut flavor cooked in.  I refrigerated my dough for about 1/2 hour prior to baking.  I baked my cookies for about 11-12 minutes, turning them and keeping my eye on them.  I ended up with a crisp edge and a soft center.  Lovely.  I also would like to share that I weigh my rolled cookie dough in order to achieve a consistent size finished cookie.  The finished cookie presents itself nicely when they're a uniform size. I started with a 20 gram (3/4 oz.) ball and after eating one after the test-run decided to drop it down to 15 grams as they are very rich.  I think this is a great cookie to give as a gift or kept in the freezer for those of you who have late night cravings!  I'll make them again for sure!  :-)

I made these tonight and they are SO good! I was worried because the dough was super stiff when mixing in the chocolate chips, etc., but the cookies turned out so moist and delicious. This is a keeper!

All of the flavor of an almond joy candy bar in a healthy grain-free and dairy-free almond joy cookies

Healthy Almond Joy Cookies

egg – room temperature

almond butter

maple syrup

vanilla

tsp salt

unsweetened shredded coconut + more for topping

almond flour

tsp baking soda

coconut oil

Preheat oven to 350F and line a baking sheet with parchment paper

In a large mixing bowl combine room temp egg, almond butter, maple syrup and vanilla. Whisk together until thoroughly combined

In a separate mixing bowl combine almond flour, shredded coconut, sliced almonds, salt, and baking soda

Fold dry ingredients into wet with a spatula

Once fully combined, fold 1/2 cup of chocolate chips into the batter

Scoop a heaping tablespoon of batter onto the lined baking sheet for each cookie &#8211; I use an ice cream scoop for this

Leave a small amount of space between each cookies &#8211; you might need to do more than one batch

Bake in the oven at 350F for 18 minutes or until they start to get golden brown on the outside

Remove cookies from oven and allow to cool fully

Melt coconut oil and chocolate chips together for topping

Drizzle on top of each cookie and sprinkle with coconut while the chocolate is still warm

Enjoy immediately or store at room temperature for up to 5 days

THESE. ARE. AMAZING. These cookies literally just came out of the oven and I am obsessed. Don’t skip putting the chocolate and extra almonds on top- they are delicious either way but you will not be sorry taking the extra step! They are not too sweet and have perfect soft texture with a little crunch from the almonds. I did use almond extract instead of vanilla and they are seriously yummy. This is the epitome of what a dessert should be. You can taste every ingredient without getting hit with straight sweetness.  I will make these again and again!

These cookies are awesome! My daughters can’t stop eating them! I am always looking for healthier cookie recipes and this one was perfect! I hate to see any recipe labeled healthy that includes refined sugar and/or white flour- makes no sense! We will definitely be making these again!

5 ingredient Almond Joy Cookies

oz coconut

chocolate chocolate

11.25 oz sweetened condensed COCONUT milk

Prep: Preheat the oven to 325°F. Line a baking sheet with parchment paper and set aside.

Cookie dough: In a large bowl combine the shredded coconut, chocolate chips, almonds, and coconut sweetened condensed milk. Stir until combined. The mixture is thick!

Spray a medium cookie scoop with nonstick spray and scoop out dough onto prepared baking sheet. Aim for level scoops, not rounded scoops as these cookies are rich. Moisten the tips of your fingers with water and press the cookies more flat, pressing in pieces of coconut where needed.

Bake: Bake cookies for 12 to 14 minutes or until tips of coconut are just starting to turn golden brown. Let cool on baking sheet for 5 minutes. Transfer to a cooling rack to cool completely. Serve and enjoy!
