These dark Chocolate Coconut Macaroons have a rich dark chocolate and coconut flavor. They&#039;re made with unsweetened coconut and almond butter, and without condensed milk or eggs. Plus you can bake or no-bake them - your choice! Healthy, delicious, Gluten-free, Vegan and Paleo.

Chocolate Coconut Macaroons

(92 grams) unsweetened shredded coconut

almond butter

cacao powder

(23 grams) coconut oil

(5 grams) vanilla extract

fine himalayan salt

(69 grams) semisweet mini chocolate chips (or chocolate bar chopped into small pieces)

(100 grams) semisweet mini chocolate chips

Mix all ingredients listed in a large bowl until well combined. But if you live in a warm, humid climate, mix the chcoolate chips into the dough after it&#039;s formed so the chips don&#039;t melt.

Using a 1 1/2 tbsp cookie scoop, scoop the mixture onto a baking sheet lined with parchment paper.

Baking is optional - If you&#039;re baking these, preheat the oven to 350°F and bake for about 10 minutes or until the bottom and edges start to turn darken. Allow them to cool on a wire rack, then refrigerate for 20 minutes to chill. If you&#039;re not baking them, place the baking sheet in the fridge to chill the macaroons for about 20 minutes.

If dipping the macaroons in chocolate, melt chocolate using a double boiler or microwave. Dip the bottoms in the melted chocolate and return to the lined baking sheets, then drizzle some more on top. Place the macaroons in the refrigerator for about 10 minutes to allow the chocolate to set.

The BEST Chocolate Coconut Macaroons you have ever tasted (Easy & Healthy!)

These Almond Macaroons (recipe courtesy of my Jewish mother-in-law) are yummy gluten-free and dairy-free cookies that are perfect for Passover.

Almond Macaroons - Gluten-Free & Dairy-Free for Passover

Preheat oven to 180C/350F/Gas 4 and line a baking sheet with parchment paper.

Place the egg whites into a mixing bowl and whisk to a soft peak.

Add the ground almonds and sugar to the bowl.

Stir everything together to bring to a dough.

Roll about a teaspoon of the mixture in your hands into a ball. (Wet hands slightly to prevent sticking).

Place each ball onto the prepared baking sheet and press down to flatten slightly.

Add an almond on top of each macaroon.

Bake 10-15 minutes until golden. Eat &amp; Enjoy!

These sweet almond macaroons, traditionally eaten during the eight-day Jewish festival of Passover, are easy to make from few ingredients. This gluten-free heirloom recipe was sent to us by delicious. reader Miriam Lewis; it was passed down to Miriam through her mother’s family. Miriam says: &#8220;My family have been making these for generations, even in the 1940s when almonds were scarce, and eggs and sugar were rationed.&#8221; If you&#8217;re looking for the French version, you can find an easy-to-make macaroon recipe here.

You’ll also need…

baking trays lined with non-stick baking paper

In a large mixing bowl, mix the ground almonds and sugar. In a separate bowl, beat the egg whites with an electric mixer on a slow speed until just frothy – it doesn’t matter if there’s still a bit of unbeaten egg white at the bottom.

Add the egg whites to the almonds and sugar, 1 tbsp at a time, mixing after each spoonful. Keep going until the mixture is soft but not runny; you may not need to use all the egg white.

Roll the mix into walnut-size balls and space them a few centimetres apart on the baking trays. Press a blanched almond half into the top of each one, flattening them slightly. Sprinkle a little caster sugar over the top of each, then leave them to sit for 10-15 minutes. Heat the oven to 190°C/170°C fan/gas 5.

Bake for 15-20 minutes until pale golden brown. The macaroons should still feel soft to the touch but they’ll continue to harden as they cool. Leave on the baking sheet for at least 10 minutes before transferring to a cooling rack to cool completely. Serve with a cuppa.
