Garlicky Spaghetti

garlic, divided

c. extra-virgin olive oil, divided

c. panko bread crumbs

red pepper flakes

Kosher salt

dry spaghetti

butter

anchovy filets, minced (optional)

lemon

c. Parmesan (optional)

c. parsley

Very good exactly as written.  The garlic panko breadcrumb mixture makes all the difference!  (1 lb of spaghetti is a lot of spaghetti if this is to be a side dish for 4.)

Made this with Chicken and we LOVED it!! I used garlic powder instead of real garlic, I wasn’t going out to buy the real stuff. I didn’t use anchovy’s, made the pasta with minimal water and it turned out excellent!! I even used bottled Parmesan.. thank you for the recipe!

This was crazy good!  Not dry at all and didn’t even add the water.  HIGHLY recommend.  Used fettuccini and forgot parsley

Terrific. I accidentally added lemon, I thought I saw that in the recipe and realized after I added it it was a mistake. So good. I used Italian bread crumbs and I didn’t add the anchovie.

Very delicious.  Skipped the butter and made it vegan.  Paired it with a 2015 Bocelli Sangiovese and a friend and I was in pasta heaven.  Would do it again and again.

Definitely too dry, but I knew it would be too dry when I read the directions. I added more garlic, chicken broth, and a little heavy cream. Turned out very good.

Good taste. Ingredients clumped together a bit. Had to doctor it a little bit with some extra butter.  We added some cut up grilled chIcken and sun dried tomato.  I will probably half the amount of pasta next time. It was way too much for 3 of us.

I made the recipe without the anchovies and it's very plain. Not a fan 😕

Delicious! Added chicken. It wasn’t dry at all. Will make again. I may have added more garlic & butter than the recipe called for.

It came out pretty good. I followed the directions accordingly and ended up putting about 2 cups more of the pasta water and a couple more tbsps of olive oil. Next time i'd like to add jumbo shrimps to this dish and whole wheat spaghetti

Made this for dinner last night and it was a hit! Because I cook GF, I used GF Spaghetti and GF panko and it turned out amazing. There was only a small amount left over, but that'll be gone at lunch today. In the rush to feed my hungry family I forgot to take a final picture, but here is my prep work.

This flavorful anchovy pasta is incredibly easy to prepare, and it comes together in around 20 minutes!

Spaghetti with Garlic, Anchovies and Parsley

extra-virgin olive oil, (plus more as needed)

garlic cloves, (peeled and thinly sliced)

anchovy fillets, (rinsed, drained, and patted dry)

red pepper flakes ((see notes))

spaghetti, (uncooked)

Italian parsley leaves

salt

freshly grated Parmigiano-Reggiano, (plus more to taste)

In a large sauce pot, bring generously salted water to a rolling boil.

Place a large sauté pan over medium-low heat (I recommend a flat-sided pan for this recipe), then add the olive oil. Add the garlic, anchovies, and pepper flakes, coat with the oil, and cook slowly, stirring occasionally with a heat-resistant spatula or wooden spoon, until the garlic is fragrant and the anchovies are melting into the oil, 5-7 minutes. Keep an eye on the pan to make sure the garlic doesn't burn or toast; adjust the heat if necessary.

Meanwhile, once the pasta water reaches a boil, add the spaghetti and cook according to package instructions until al dente. Just before it's finished, add the parsley to the sauté pan and toss with the other ingredients.

Use tongs to carefully transfer the pasta directly from the boiling water to the sauté pan (you want some pasta water to transfer; it will help create the sauce).

Increase the heat to medium and toss the pasta with the pan ingredients. If needed, add a small drizzle each of oil and pasta water to keep everything smooth. Taste the pasta and season with salt to taste.

Transfer to individual serving plates or bowls and top with grated Parmigiano-Reggiano.

A quick pasta recipe, perfect for a weeknight. Melted broccoli in a garlicky, chilli oil, finished with a shower of parmesan. It doesn't get any better.

Melted Broccoli & Anchovy Pasta

Large Heads of Broccoli

Mild Green Chillies

Garlic Cloves

Tin of Anchovies

Tbsp Balsamic Vinegar

Parmesan

Fusilli

Parsley (25 grams)

Trim the broccoli stalk, then chop the broccoli into smaller chunks, place into a food processor and blitz until minced. Peel the garlic cloves and finely mince. Thinly slice the chilli. Grate the cheese.

Bring a large saucepan of salted water to the boil.

Meanwhile, drizzle 5 tbsp of olive oil into a large frying pan over medium heat. Once hot, add the garlic, chilli and anchovies, cook until the fish has broken down, 3-4 mins. Add the balsamic and let it evaporate fully. Add the broccoli and cook until almost mushy, 6-7 mins.

Once the water is boiling, add the pasta in and cook for 3 mins until it’s just under al dente.

Using a slotted spoon, transfer the pasta into the pan with the broccoli. Add some pasta water and stir through until the sauce emulsifies and the broccoli breaks down even more.

Take it off the heat, stir through three-quarters of the cheese, adding more pasta water if necessary. Taste and season with salt and pepper, if needed.

Serve the pasta with a sprinkle of the remaining cheese.

This anchovy pasta recipe from Naples (spaghetti alla Gennaro) is easy and simple to make. All you need is spaghetti, anchovies, garlic, stale bread, oregano,and basil to make this version of midnight pasta, also known as Totò’s pasta.

12.5 oz spaghetti (360 grams)

Peel the garlic cloves and cut 1 in half. Cut the anchovy fillets into small pieces. wash and pat dry the basil leaves.

Put a pot of water onto boil for the spaghetti. Add salt once it starts to boil and bring to the boil again.

Rub the bread slices with the cut garlic and cut them into small cubes for croutons.

Prepare ingredients

Saute 1-2 garlic cloves in olive oil in a skillet. Then add the croutons and fry on each side until golden and crispy. You can use breadcrumbs instead. These brown very quickly and need less olive oil. Remove croutons from the pan and set aside.

Make the croutons

Add more olive oil to the skillet and sauté the rest of the garlic and the anchovy pieces. Keep stirring the anchovy until it starts to melt and then add the dried oregano. Remove from the heat so the oregano doesn&#39;t burn.

Make the anchovy sauce.

Cook the spaghetti al dente according to the instructions on the packet. Save a little pasta cooking water, drain the pasta and add it to the hot anchovy sauce with a little pasta cooking water (2-3 tbsps). The sauce may need to be reheated before adding the pasta.

Mix the spaghetti with the sauce and then add some of the croutons. Mix again and then add the rest of the croutons and the fresh basil torn or cut into pieces. Serve immediately.

Finish and serve.

cracked pepper (to serve)

Bring a large pot of salted water to the boil and cook pasta according to packet instructions.

Drain pasta, reserving the pasta water.

Add anchovies (and oil) to a skillet and bring to a medium heat.

Add minced garlic and chilli flakes, stir to combine and cook for 2-3 mins

Add cooked pasta to the anchovy mix, reduce to a simmer and add the pasta water

Stir to combine and allow the pasta to return to a medium heat ( 2-3 mins).

Serve with capers, Parmesan, cracked pepper and freshly chopped parsley Note 5
