A quick simple and easy egg paratha recipe made using wheat dough by spreading egg mixture and cooking it perfectly.

Egg Paratha Recipe, Egg Chapati Roll

wheat flour/atta

salt per taste (optional)

tsp ghee/oil

water approx... to make the dough

onion

tsp coriander leaves

tsp finely chopped green chillies

eggs

salt -

tsp red chilli powder

turmeric powder

Firstly, in a bowl, add wheat flour, add pinch of salt if required, add ghee/oil and mix it well.

Add water gradually and knead it to make a soft dough.

Cover and rest it aside for 5 minutes.

To make the dough:

In a bowl, add finely chopped onions.

Add freshly chopped coriander leaves and finely chopped green chillies.

Add beaten eggs into it.

Add salt as per taste, add red chilli powder, turmeric powder and mix it well.

Make the stuffing:

Take a portion of the dough and make a round ball.

Dust some flour on the rolling pin.

Roll the dough into a small circular shape.

Apply all over the roti.

Fold the roti in such a way that it takes the shape of a square.

Once again dust some flour on the rolling pin and roll the roti in the form of a square paratha.

Heat the tawa/gridle.

Place the paratha on the tawa and cook for few seconds.

Add the beaten egg mixture on the paratha and spread the egg mixture fully.

Cook for few minutes and fold the roti from one side and apply oil on the folded part.

Fold the other end too and apply oil(watch the video below).

Cook both the sides well and apply oil on the the outer area and cook the paratha well.

Make sure the paratha and the egg mixture inside is cooked well.

Cut it into two halves and serve it with ketchup or sauce!!!

Make and cook the paratha:

Anda paratha or egg paratha are Indian flat bread made with whole wheat flour and topped with egg.

wheat flour (or atta)

water

tsp oil

onion (chopped finely)

green chili (chopped (skip for kids))

pepper powder

turmeric

salt

coriander leaves (chopped)

Prepare eggs. Chop veggies finely. Break egg to a bowl, add veggies, salt, pepper powder and turmeric. Beat everything well until frothy. Set this aside.

Knead wheat flour with just enough warm water. Add few drops of oil and knead again to make soft pliable dough. Cover and set aside for at least 20 minutes.

Sprinkle flour on the rolling area and roll the paratha as shown in the pictures below.

Heat a tawa or griddle until hot enough.&nbsp;

Place the paratha and cook until it is slightly firm on one side., Flip and cook on the other side as well until slightly firm and the layers get puffed &amp; separated. Paratha has to be half cooked at this stage and not completely done.

Preparation for egg paratha

Quickly remove the paratha to a plate. Gently open the top layer on one side keeping the other sides intact. Pour half of the egg mixture and gently spread. Cover back the layer.

Gently transfer the paratha to the tawa. Drizzle some ghee or oil. Allow to cook on a medium flame.

When the egg is almost cooked flip the paratha and press it gently.

Cook on the other side as well until the egg is done completely and the paratha has golden spots.

Serve egg paratha with chutney or vegetable salad.
