This Mexican Chicken Casserole has all of the flavors of your Mexican Food favorites packed into a quick and easy to make one dish casserole!  The kids and adults can agree that this meal is a dinner time winner!

Shredded Mexican Chicken Casserole

chicken

salsa

15.25 oz canned corn, drained ((1 can))

black beans (rinsed)

garlic powder

salt

tsp cumin

colby jack cheese (shredded (or mexican blend))

sour cream

guacamole

green onions

Mix the shredded chicken, salsa, corn, black beans, salt, garlic, and cumin together and spread in a large casserole dish.

Cover evenly with cheddar cheese.

Bake at 350˚F for 20-25 minutes or until the cheese is melted and the chicken is heated through.

Once done, remove from the oven and garnish with your choice of sour cream, guacamole and green onions.  Enjoy!

This easy Million Dollar Baked Spaghetti Casserole is a layered casserole that is hearty and delicious! With layers of pasta, meaty sauce, and 3 kinds of cheese, this casserole is a crowd pleaser and makes plenty to feed everyone!

Million Dollar Baked Spaghetti

spaghetti

beef

Italian sausage

spaghetti sauce ((1 large jar, or 2 small jars))

ricotta cheese

cream cheese (softened)

Italian seasoning

mozzarella cheese

parsley

Cook the spaghetti noodles to al dente per package directions. Once done, drain and set aside.

While the spaghetti cooks, brown the ground beef and Italian sausage over medium heat. Once it is done, drain then mix together with the spaghetti sauce.

In a medium bowl, combine the ricotta cheese, softened cream cheese, sour cream, and Italian easoning. Mix until smooth.

In a 9x13 casserole dish, spread a thin layer of sauce over the bottom. Add half the spaghetti noodles on top of the sauce. Then spread evenly over the noodles half of the meat sauce, half of the ricotta mixture, and half of the mozzarella cheese. Repeat these layers with the remaining spaghetti, meat sauce, and cheese.

Bake at 375˚F for 40-45 minutes or until the edges are bubbly and the casserole is hot throughout.

Garnish with fresh parsley and serve warm.

Apple Fritter Breakfast Casserole

(12.4 oz Pillsbury Cinnamon Rolls)

(20 oz apples)

Preheat the oven to 375˚F.

Chop the cinnamon rolls into 6-8 pieces each. Open the can of apples and chop them up into small bite sized pieces.

Place the cinnamon rolls, apples, melted butter, sugar and cinnamon in a bowl and mix them until everything in combined and the cinnamon rolls are coated in the apple mixture.

Spray a large casserole dish with cooking spray and then pour the cinnamon rolls and apples into the dish and place in the middle rack of the oven and bake for 40-50 minutes or until cooked through.

Drizzle the glaze from the cinnamon rolls over the top of the casserole.  Serve warm and enjoy!

These quick and easy Sheet Pan Chicken Fajitas bring all the delicious flavor of fajitas into a super fast weeknight meal. Use these to feed a hungry family, or to meal prep for a healthy meal you can eat all week.

Sheet Pan Chicken Fajitas

1.5 lbs boneless, skinless chicken breast

onion

green bell pepper

red, yellow or orange bell pepper ((or use half each of two colors))

tbsp fajita seasoning

tbsp oil

lime

flour tortillas

Mexican rice

refried beans

lettuce

pico de gallo

shredded cheese

Preheat oven to 400˚F

Cut the chicken breast into thin strips (1/4&quot;-1/2&quot;) against the grain of the meat and place on one half of a large baking sheet. Optional: line the baking sheet with foil for easy clean up.

Season

Drizzle 1/2 of the oil over the meat and then sprinkle with seasoning and use tongs to toss until the meat is evenly coated. Squeeze the juice from 1/2 of the lime over the meat and give it one more quick mix.

Slice

Slice the onions and bell peppers into thin strips and place them on the other half of the baking sheet. Toss them with the remaining oil.

Bake

Bake for 12-16 minutes or until the meat has reached 165˚F. Careful not to overcook, or the meat can become dry and/or tough.

Drizzle

Remove from oven and drizzle the remaining fresh lime juice over the vegetables and meat.

Serve

Serve with tortillas and your choice of rice, beans, sour cream, guacamole, cheese, and pico de gallo. ENJOY!
