In a large frying pan or sauce pan, melt the coconut oil on medium-high heat. Add the onions and fry them until starting to brown, about 5 minutes.

Then add the garlic and the spices: curry powder, the garam masala and tandoori masala. Stir quickly to keep them from catching while cooking for another minute.

Add all the apples and vegetable cubes. Stir well to coat with the spices. Cook for another 2 minutes, and stir often and keep things from catching.

Add the coconut milk or soy cream, water, salt and peanut butter. Stir to combine and bring to a boil, still on medium-high heat.

Reduce heat to low-medium, let simmer for about 15 min, or until the potatoes and squash are tender. Stir occasionally.Some types of apples might stay intact, while others might fall apart while cooking. Don&#039;t worry, either is fine!

Towards the end, stir in the aduki beans and keep simmering to heat through for at least 3  more minutes. Done!

Allowing the curry to cool for a 10 minutes before serving allows the flavours and the subtle sweetness of the apples to come out. Serve with rice, naan, popadoms and mango chutney, or our delicious red lentil flatbreads.

Rhubarb Chicken Curry

500 g/ about 1 pound boneless (skinless chicken breast)

garlic

ginger

red chili flakes (to taste)

green curry powder

vegetable oil

white wine vinegar

350 g/ 12.3 oz rhubarb

apple

onion

honey

raisins

coconut milk (400 g/ 14 oz)

Slice the chicken breast into 2 cm/0.8-inch pieces. Grate the garlic, chili, and ginger. Place everything in a bowl, add the curry powder, oil, and vinegar, mix well, cover the bowl and marinate for about 1-2 hours.

In the meantime clean the rhubarb and cut it into 3 cm/1.6-inch pieces. If the rhubarb stalks are too wide, cut them lengthwise first and then into the smaller strips. Slice the unpeeled apple thinly and chop the onion finely.

Heat the skillet and melt the coconut oil. Add the rhubarb, apple and onion and cook for about 2-3 minutes, stirring gently. Add the honey, stir again, and remove everything from the pan.

Wipe the pan clean with a paper towel. Take the chicken slices out of the marinade and cook in 2 batches, about 2-3 minutes each batch. Stir a few times to make sure that the chicken browns on all sides.

Return the rhubarb-apple mixture back to the pan, add the raisins and the coconut milk, reduce the heat to medium-low and simmer for about 10 minutes, the sauce should thicken slightly, the chicken should be cooked through and the rhubarb should be soft but not mushy.

Serve with rice.

Vegan Coconut Curry with Apples

½ large yellow onion (chopped)

Fuji apple (diced)

turmeric

can of light coconut milk ()

sugar

soy sauce

Vegan sausage of choice (optional)

Salt and pepper (to taste)

In a medium-large pot over medium heat, sauté the onion and garlic. Add water if the ingredients start to stick.

Once the onions have become translucent, add the diced apple and continue heating until softened. Add in the spices and mix well.

Add in the coconut milk, soy sauce, sugar, shredded coconut, and vegan sausage if using. Stir until a boil begins to form and reduce the heat to low. Cover and simmer for 15-20 minutes.

Add salt and pepper to taste, stir and serve the curry.
