Apple Fritter Cake

all purpose flour

salt

sugar

baking powder

milk

eggs

vanilla

butter (melted)

2-3 Large apples (peeled, cored, and diced very small)

butter (softened)

brown sugar

Tablespoon flour

cinnamon

Tablespoon milk

Mix batter, combine flour, salt, sugar, baking powder, milk, eggs and vanilla together in a bowl.

Once combined, add the melted butter, mixing gently to avoid splashing.

Transfer the batter into a greased 9×13 pan.

Evenly distribute the apples over the top of the batter

In a separate bowl mix together the ingredients listed for the topping, it will be thick so drop even sized scoops of it evenly over the apples.

Drag a knife through the batter using a swirly motion, allowing the topping to mingle with the apples and batter below.

Bake at 350 degrees for 40-45 minutes

Remove from oven, rest 15 minutes and generously drizzle the glaze over the top.

Preheat your oven to 350°F and grease a 9x13 baking pan with non-stick cooking spray. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a larger mixing bowl, stir together, oil, sugar, and brown sugar together.  Add the eggs one at a time, followed by the vanilla extract. Make sure to mix well after each addition. Add applesauce and apple cider.

Add the dry ingredient mixture and fold together until just combined. Gently fold the diced apples into the batter, making sure they are evenly distributed.

Spread the cake batter into the prepared pan. Bake the cake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean. Since this cake can brown on the top before it is fully baked through, place a piece of foil on the top of the cake after 25-30 minutes of baking time.

While the cake is cooling, prepare the brown sugar glaze. Combine the butter, brown sugar, and heavy cream in a saucepan over medium heat. Allow the butter to melt, whisking constantly, until it comes to a boil. Boil for 1 minute. Reduce heat to low and cook for 1 minute longer. Allow the glaze to cool.

Once the cake has cooled for a bit, using a toothpick or fork, poke holes throughout the cake. Drizzle the brown sugar glaze over the top, allowing it to soak into the cake. Allow it to soak into the cake and set for a few minutes. Serve with vanilla bean ice cream or fresh whipped cream.

Amish Apple Fritter Bread

apples

tsp ground cinnamon (heaping spoonfuls)

ginger

egg (room temperature)

white granulated sugar

vegetable oil

sour cream (room temperature)

tsp vanilla extract

all-purpose flour

tsp baking soda

½ tsp kosher salt

tbsp milk

Preheat your oven to 350 degrees F. Prepare your loaf pan with nonstick spray or cake release.

In a medium mixing bowl, mix the chopped apples, brown sugar, cinnamon, and ginger together. Set aside.

In a large mixing bowl, whisk together the egg, granulated sugar, vegetable oil, sour cream, and vanilla extract until well combined.

In a separate bowl, whisk together flour, baking soda, and kosher salt, then add it to the bowl of wet ingredients. Use a rubber spatula or wooden spoon to mix the in dry ingredients until almost completely mixed in.

Fold in 3/4 the amount of the apple-cinnamon mixture into the batter, then pour into your prepared loaf pan.

Top the apple fritter bread with the remaining apple chunks and bake for 50-55 minutes, or until the internal temperature is 200 degrees F.

Let the cake cool in the pan for at least 30 minutes before serving. I personally like waiting an hour or until it&#39;s room temperature.

In a small mixing bowl, whisk together the powdered sugar, vanilla extract, and milk until it comes to a smooth consistency. If it&#39;s too thin for your liking, sift in a little more powdered sugar.

Pour the glaze over the fritter bread generously right before serving.
