This Apple Fritter Focaccia is pure comfort food! It&#039;s like a warm hug in bread form, with the perfect balance of sweet apple filling and crispy edges. Trust me, you&#039;ll be dreaming about this for days!

Apple Fritter Focaccia

gluten-free bread flour

tsp baking powder

tsp kosher salt

instant yeast

water (110°F)

water

olive oil (plus an additional 2 tbsp for greasing the pan)

tsp honey

cinnamon

apple pie filling

sugar

milk

Prepare the Yeast Mixture: In a small bowl, add the hot water, honey, and yeast. Mix for a few seconds and set aside for 5 minutes to bubble.

Mix Dry Ingredients: In a large mixing bowl, add the flour, cinnamon, baking powder, and salt. Mix well.

Combine Wet and Dry Ingredients: Create a well in the center of the flour mixture. Add 3 tbsp of olive oil, sparkling water, and the yeast mixture. Mix until incorporated. The dough will be very sticky and lumpy.

Prepare the Baking Dish: Using 2 tbsp of olive oil, oil a 9x13 metal baking dish with 2” sides. Line the dish with parchment paper, allowing it to come up on the two sides for easier removal of the focaccia later.

Spread the Dough: Place the dough in the prepared pan and spread it out evenly. Add tablespoons of apple pie filling all over the focaccia.

Let the Dough Rise: Cover the pan with saran wrap, top with a towel, and set aside until the dough triples in size (approximately 1 hour).

Bake: Preheat your oven to 425°F. Once the dough has risen, bake for 25-30 minutes until golden brown. Remove from the oven and allow to cool completely before cutting.

Prepare the Topping: In a bowl, mix together the powdered sugar and milk until the mixture is drizzly. If needed, add more milk to achieve the desired consistency. Pour over the entire loaf.

Serve: Cut into pieces and enjoy!
