Caramel Apple Fudge

unsalted butter (1/4 cup)

mini marshmallows

sugar

heavy cream

packets [Apple cider drink mix, 0.74 oz each]

white chocolate chips

caramel bits

Line an 8x8 inch baking pan with 2 layers of tin foil, leaving an overhang.

In a large pot combine the butter, marshmallows, sugar, heavy cream, and packets of apple cider, cook over medium heat, stirring occasionally until the marshmallows are melted, about 8-10 minutes.

Meanwhile, place the caramel bits and heavy cream in a microwave safe bowl. Microwave the caramel at 45 second intervals at 50% power until they are melted and smooth. Set aside.

Remove the pot from the heat and stir in the white chocolate chips until they are completely melted.

Pour the fudge into the pan. Drizzle the caramel on top of the fudge, use a small metal spatula to create swirls in the fudge.

Refrigerate for 3 hours. Cut into small squares, for best result keep the fudge in the fridge.

Soft and sweet, Apple Pie Fudge is the perfect bite sized version of the classic pie. An easy homemade fudge packed with apple pie filling and warming spices. No candy thermometer needed!

Apple Pie Fudge

unsalted butter

kosher salt

heavy whipping cream

cinnamon

nutmeg

allspice

apple pie filling

gingersnap cookies (broken into bite site pieces)

Line an 8x8 baking dish with parchment paper. Set aside.

Add white chocolate and apple pie filling (try to use just the apples, and not the jelled part of the pie filling) to a mixing bowl, attach whisk to mixer. Set aside.

In a large saucepan, heat sugar, butter, salt, cream, cinnamon, nutmeg and allspice over medium high heat. Bring to a rolling boil and stir continuously for 4 minutes. Remove from heat.

Quickly pour mixture into prepped mixing bowl with white chocolate and apple pie filling. Beat on medium speed until white chocolate is smooth (about 2 minutes). Pour into baking dish. Refrigerate for 3 hours, until hardened, or overnight.

Remove parchment paper from pan and place on cutting board. Cut fudge into small bite sized pieces and top with a small piece of cookie. Store in covered container in refrigerator. Use within one week, or freeze. ENJOY!
