Crisp on the outside and fluffy on the inside, whole wheat Apple Cinnamon Waffles are perfectly spiced and bursting with chunks of sweet, tender apples...and as a bonus, they make your whole house smell heavenly as they bake!

Apple Cinnamon Waffles

Homemade Whole Wheat Waffle Mix (see NOTES below

cinnamon

nutmeg

buttermilk

applesauce

(4 tablespoons) butter (melted and slightly cooled)

eggs

maple syrup

vanilla extract

apple (peeled & diced)

apples (thinly sliced)

butter (plus additional as needed)

Cinnamon sugar (see NOTES)

Preheat waffle iron. Measure Homemade Whole Wheat Waffle Mix into a large bowl. Whisk in cinnamon and nutmeg. Set aside.

In another bowl or large measuring cup, combine buttermilk, applesauce, melted butter, eggs, maple syrup, and vanilla. Pour wet ingredients into flour mixture and stir until all ingredients are incorporated, but do not over-mix (a few lumps are fine). Fold in diced apples and allow to rest for a few minutes.

Cook the waffles according to your waffle iron's directions. Remove waffles to a cooling rack (in a single layer) and serve immediately, or keep warm by placing directly on the oven rack (again, in a single layer) in an oven that's been heated to 200°F and then turned off.

While the waffles are cooking, make the Cinnamon Apples by setting a large skillet over medium heat and adding the butter. Once the butter has melted, swirl to coat the pan and add the apples, tossing them in the butter to coat. Allow the apples to cook for about 3 minutes until they begin to soften, stirring occasionally. Generously sprinkle with cinnamon sugar, stir, and repeat until the apples are well coated. Continue to cook, stirring occasionally and adding more cinnamon sugar as desired. Add an additional pat of butter during the cooking process if needed, and cover the pan for a few minutes if you wish to speed up the softening of the apples. Apples are done once they are as tender as you like, with sugar that has started to caramelize. Serve apples hot over warm waffles with a drizzle of pure maple syrup, if you wish.

This Apple Waffles recipe uses two whole apples and the batter is made easily in a blender. Made using healthy ingredients like rolled oats, eggs, milk, and butter, or coconut oil, it makes a healthy fall breakfast.

Apple Waffles

Eggs (large)

Old Fashion Oats

Milk (more if needed)

coconut oil

brown sugar (packed)

Baking powder

Salt

Maple syrup (for serving)

Preheat your waffle iron.

Add all ingredients along with 1 cup chopped apples (reserve 1 cup for later use) into a blender and blend until smooth. Tip: It took about 2 minutes in my blender.

Pour batter into a bowl and stir the remaining 1 cup chopped apples into the batter. If the batter looks thick, then stir in 1 to 3 tablespoons of more milk.

Add about 1/3 cup batter into each waffle plate and cook according to manufacturers&#39;  instructions until deep golden. (I cooked for 6 minutes in my waffle iron). 

Remove the waffles onto a wire rack and repeat with the remaining batter. Pro tip: Remove the waffles gently!  These waffles tend to be softer, due to the high water content in apples and the absence of flour.

Serve waffles hot with maple syrup.

I just made this for tomorrow’s breakfast. They taste amazing.
I only used one big apple in the blender and didn’t put another apple before baking and used maple syrup instead of sugar and I love the taste and texture.

Tasty waffles! Nice to have an alternative recipe work out. I made some modifications for those curious. I used flax seed eggs instead of regular eggs and oat milk. I recommend using a small waffle maker as they turned out better. nnThank you for the recipe

O-M-G. THIS IS SOOOO GOOD. It's like eating cookie almost. The apple just killed it and the chunks, wow. So I actually used 2 big apples, and 1 tbsp sugar and 1/4 c butter, no salt coz it's already salty. I up my oats to 2 cups. Just amazing. Even my picky eater 23 yr old daughter loves it. I also tried it with banana instead of apple and again ,sooooo good. I grinded my oat first then mix with the liquid. Thank you so much. I will be making this every wk on my day off.

These are now my fav waffles. Absolutely delicious!!
I swapped “more chunky flavor vanilla” fir sugar and used pea protein milk. Worked just fine!

These are very good waffles!! Husband loved them too. Nice to have hot chunks of apple in the waffle and I'll add walnuts next time. Easy, quick, delicious! Glad we have a few for the freezer. 😊
