Banana Applesauce Oatmeal Muffins

oats (use gluten-free if needed*)

Preheat oven to 425F/220C. Grease a 12-hole muffin pan or line them with muffin liners.

Place oats in a blender and blend until they are finely ground. Pour oat flour into a large mixing bowl along with rest of the dry ingredients. Mix well.

In the blender, place in all wet ingredients. Blend until smooth.

Pour wet ingredients into dry and stir until everything is just combined.

Fill muffin tin with batter about ¾ way full. Optionally, sprinkle on some oats before baking.

Bake for 8 minutes. Reduce temperature to 350F/180C and bake for another 10-15 minutes, or until a toothpick comes out clean.

Once they are done baking, let them rest in the pan for 5 minutes, then transfer them to a cooling rack to cool down further. Enjoy while warm!

Applesauce Muffins with Greek Yogurt and Oats

applesauce (unsweetened)

Greek yogurt

honey (or ½ cup sugar)

rolled oats (or quick oats)

Heat the oven and prep the pan

Preheat the oven to 350°F (180°C). Lightly oil a non-stick 12-cup muffin pan. If using liners, oil them too. The batter is sticky.

Mix the wet ingredients

In a large bowl, whisk 1 cup applesauce, ½ cup Greek yogurt, 1 egg, ⅓ cup honey, and 1 tablespoon vanilla extract until smooth.

Add the dry ingredients

Add 1½ cup all-purpose flour, 1 cup rolled oats, 1 teaspoon cinnamon, 2½ teaspoons baking powder, ½ teaspoon baking soda, and 1 pinch salt. Stir gently with a spoon until just combined. Do not overmix.

Add raisins and fill the pan

Gently stir in ½ cup raisins. Spoon the batter into the muffin cups, filling them almost to the top.

Bake and cool

Bake at 350°F (180°C) for about 22 minutes, until a toothpick comes out mostly clean. Let cool 5 minutes in the pan, then move to a rack to cool.

Taste and sweetness is lacking, but otherwise a very customizable recipe with a soft, fluffy texture. Can easily fix that with dates, switching to banana, or adding a bit more warm spices.
