Coconut apricot balls are made with four ingredients&mdash;dried apricots, unsweetened coconut, walnuts and sweetened condensed milk. Try this no-bake recipe for the holidays!

Coconut Apricot Balls

dried apricots (1 1/2 cups or 170 g)

(288 g) unsweetened flaked coconut (separated)

(120 g) chopped walnuts (or nut of your choice)

(208 g) sweetened condensed milk

sugar (optional)

Line baking sheet

Line a baking sheet with parchment paper (or wax paper). Set aside.

Make mixture

Place apricots, 2 cups shredded coconut, walnuts and sweetened condensed milk in a food processor. Pulse until combined, about 30 to 60 seconds.

Shape apricot balls

Shape mixture into 1-inch balls and roll in remaining 1 cup shredded coconut. You can also roll in powdered sugar if preferred. Coconut apricot balls may be eaten right away or stored in an airtight container in the refrigerator for up to one week.

Chocolate Chia Apricot Balls

80 g chopped dried apricots (½ cup)

chocolate chips (½cup)

100 g rolled oats (1 cup)

g chia seeds (3 tablespoons)

maple syrup (3 tablespoons)

nut butter (3/4 cup (almond, peanut, cashew))

Place all ingredients in a bowl and mix

Set the mix aside for 20 mins, this allows the chia seeds to gel a little and will mean the mix is easier to roll into balls

Take spoonfuls and roll into balls

Refrigerate
