Asian-inspired toasted quinoa with a medley of tender, nutrient-packed mushrooms. Easy and so delicious!

Asian-Style Toasted Quinoa with Mushrooms

garlic

sesame oil

white quinoa (uncooked)

vegetable broth

mushrooms

onions

sesame seeds (more for garnish if desired)

Tbsp. tamari (or soy sauce)

Mince garlic. Rinse and drain quinoa well.

In a medium saucepan over medium heat, add 2 tsp. sesame oil. When oil is hot, carefully add minced garlic and quinoa (rinsed &amp; drained). Cook for 3-4 minutes, stirring often to prevent burning, until quinoa is lightly toasted.

Carefully add vegetable broth to quinoa and increase heat to high. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until quinoa is cooked.

Meanwhile, slice or halve mushrooms. Slice green onions and set aside.

In a separate large pan over medium heat, sauté shiitakes. (I use vegetable broth/water for no-oil sauté method. Or you can use additional sesame oil if desired.) Stir and sauté for 5-6 minutes until softened. Remove from pan.

Repeat this step for the portobellos, then the creminis. (I cook the mushroom varieties separately since they vary in size and cooking time, but feel free to do them all at once if you prefer.)

Combine all cooked mushrooms together in the large pan.

Add cooked quinoa, green onions, sesame seeds, and tamari. Stir well to combine, and sauté for 1-2 minutes.

Add more tamari to taste if needed. Serve sprinkled with additional sesame seeds if desired.

Preheat your air fryer to 370 degrees.

Transfer the bok choy to the basket of the air fryer. Cook at 370 degrees F for 6 minutes, stirring or flipping halfway.

Smoked Asian Style Spare Ribs

St. Louis Style Spare Ribs

kosher salt

brown sugar

Chinese 5 spice

onion powder

ginger

mustard

garlic (diced)

soy sauce

ketchup

honey

rice vineager (I prefer the seasoned variety)

water

corn starch

Set up your smoker for 265℉

Combine all the dry rub ingredients, besides the salt, and mix to combine.

Remove the membrane from the back of the ribs and seasoning generously with salt and then the rub.  Place in the refrigerator for at least 30 minutes prior to putting on the smoker.

Place the smoker in the ribs and smoke for approximately 5 hours or until the meat pulls back from the bones and meat starts to break apart when doing the &quot;bend test&quot; .  Brush on the sauce about 10 minutes before removing from smoker.

Set a small pot on medium and add the sesame oil.  Once up to heat, add the garlic and cook for about 60 seconds or until the garlic is very fragrant.

Afterwards, add the remaining ingredients besides the water and corn starch.  Whisk to combine.

While the sauce is coming up to temperature, add the water and cornstarch to a container with a lid.  Shake vigorously to combine to create a slurry.

Once the sauce is simmering, add the cornstarch slurry and whisk to combine.  Bring back to a simmer for 5 minutes then remove from heat.  The sauce is ready to be used.

Asian Five-Spice Meatballs Recipe

lbs. pork

five-spice powder

+ 2 tsp. coconut aminos

chicken stock

raw honey

In a bowl, combine the ground pork, ginger, garlic, chives, and five-spice powder, and season to taste.

Mix everything until well combined, and roll the meat mixture by hand into 1-inch meatballs

Melt coconut oil in a skillet over medium-high heat.

Cook the meatballs in batches for 8-10 minutes, turning every couple of minutes.

When the meatballs are done, remove them from the pan and set them aside.

Heat the coconut aminos, chicken stock, and honey in the same pan used for the meatballs and bring to a light simmer. Add the meatballs back to the skillet, tossing gently until well covered.

A savory mushroom rice that is simple to prepare! Turn it into a main dish with more veggies, edamame, tofu, or tempeh.

Asian-Style Mushroom Rice

brown basmati rice (uncooked)

lb. mushrooms (cremini, button, shiitake, oyster, etc.)

yellow onion

green onions

spinach

Cook rice according to package instructions* (use veggie broth for more flavor if desired).

Meanwhile, finely dice onion. Slice mushrooms, not too thin, about 1/3-1/4 inch.

In a large skillet over medium-high heat, sauté onion for about 7-8 minutes. (I use water/veggie broth for no-oil sauté method, adding more as needed.)

Add mushrooms and cook another 8 minutes.

Meanwhile, mince garlic and slice green onions.

When mushrooms are softened, add garlic and sauté 1 minute.

Reduce heat to medium. Add cooked rice, green onions, and tamari.

Stir well and cook for about 5 minutes or until heated through. (Add spinach and/or mung bean sprouts during this step if using.)

Season to taste with more tamari if desired before serving.

Asparagus Mushroom Stir-Fry

asparagus

mushrooms (I use cremini)

Tbsp. toasted sesame oil (*oil-free option below)

cornstarch (or arrowroot)

Make the sauce: Mince garlic, and add all sauce ingredients to a small bowl. Stir to combine and set aside.

Halve or quarter the mushrooms (wiped clean). Cut asparagus into 1-inch pieces, woody ends removed. Slice green onions.

In a large skillet (or wok) over medium-high heat, add sesame oil.*

When hot, carefully add the mushrooms and cook for 3-4 minutes.

Add the asparagus and green onions. Cook another 3-4 minutes, stirring often.

Re-stir the sauce, then add to skillet. Stir well and cook for 2-3 minutes (or until vegetables are desired tenderness).

Garnish with sesame seeds and spoon any remaining sauce over the vegetables before serving if desired.

I'm a teenager who wants to get more into cooking and WOW. This recipe is amazing!!! Very easy, and I put a lid over the pot during step 6 and let it simmer for about 7 minutes. So great and I'll come back to this one!!!

Made this for dinner last night and added onion. So yummy and we all loved it!! Will definitely be making again.

I made this tonight. About halfway through prep I realized that my mushrooms were moldy. I tossed them and made this with broccoli, asparagus, and carrots. I added one glug of maple syrup to balance the flavor. So easy and pretty yummy. Saving this recipe!
