Angel Hair with Shrimp and Asparagus is a quick and easy pasta dish made with fresh tomatoes and asparagus in a light tomato broth.

Angel Hair With Shrimp And Asparagus

asparagus (tough ends removed, quartered)

olive oil

plum tomatoes (diced)

garlic (thinly sliced)

shrimp

chicken broth

oz white wine

kosher salt and fresh pepper (to taste)

herbs de Provence (or you can use your favorite herbs)

tsp red pepper flakes

oz angel hair pasta (wheat or gluten-free)

Angel Hair with Shrimp and Asparagus

Season shrimp with salt and pepper. Heat a large skillet on high heat.

When skillet is hot, spray with oil and add shrimp.

Cook shrimp about 1 to 2 minutes in each side until ALMOST cooked through and remove from the pan. Set aside.

Reduce skillet heat to medium, add olive oil and garlic and sauté until golden, careful not to burn, about 1 minute.

Add tomatoes and season with salt and pepper. Simmer until tender, about 4 minutes.

Add the white wine and broth and stir, cook 1 minute then add the asparagus, salt, pepper and herbs.

Cover and simmer for 10 minutes on medium low heat, until the vegetables are tender.

While sauce is simmering, bring a large pot of salted water to a boil and cook pasta al dente. Drain when done.

After sauce simmers 10 minutes, return shrimp to sauce and finish cooking, about 1 minute (Do not overcook or shrimp will get tough).

Add pasta to the sauce and toss well.

Divide equally in 4 bowls and top with a good grated cheese.

tbsp extra virgin olive oil

garlic (crushed)

salt and fresh cracked pepper

Parmigiano-Reggiano cheese

In a large pot boil 4 cups water with salt.

When boiling, add asparagus and cook 3-5 minutes, until tender crisp.

Drain asparagus in colander reserving 1 cup liquid before draining.

Fill pot with salted water, cover and boil for pasta.

When water boils cook pasta according to package directions for al dente.

Meanwhile, in a sauté pan heat olive oil.

Add garlic and cook until golden, add asparagus, salt and pepper and sauté about 1-2 minutes, tossing with oil and garlic.

In a small bowl combine egg yolk, Parmigiano-Reggiano cheese, 1/4 cup reserved asparagus liquid, salt and pepper.

Mix well.

After pasta is drained return to pot and mix with egg mixture.

Cook on medium-low about 2 minutes, until sauce thickens and sticks to pasta.

Toss in asparagus and mix well.

Adjust salt and pepper to taste.

If pasta seems too dry add more reserved liquid a tablespoon at a time.

Serve with additional grated cheese.

all-purpose whole wheat white flour

skim milk

cream cheese

parmesan cheese

salt and fresh ground pepper (,

parsley (, for garnish)

Bring a large pot of water to a boil.

Add pasta to boiling water and cook for 7 minutes; add prepared vegetables to the pot and continue to cook for 3 more minutes, or until al dente.

Drain.

In the meantime prepare the sauce.

Heat olive oil in a large skillet over medium heat.

Add onions and garlic and cook for 3 minutes, or until tender.

In a small mixing bowl combine flour and chicken broth; whisk until thoroughly incorporated.

Add broth mixture to the onion mixture in the pan.

Whisk in milk; continue to whisk constantly and bring to a boil.

Reduce heat and cook for 1 more minute, or until thickened.

Stir in the cream cheese; stir until melted.

Stir in the grated parmesan cheese and remove from heat.

Season with salt and pepper.

Add pasta and vegetables to the sauce; stir until completely combined.

Serve.

Cup Green Peas, frozen

lbs Asparagus, hard stem trimmed and rest cut to 3 inch pieces

Cup Cream Cheese, 8 ounce cream cheese or boursin cheese

Cup Parmesan Cheese, grated

Bunch Basil, leaves

tbsp Lemon, juice

Salt and Black Pepper, adjust to taste

tbsp All-Purpose Flour

tbsp Olive Oil

tbsp Sun-dried Tomatoes, 2 tomatoes, small diced

Cup Milk

Cup Chicken Stock

Cook Asparagus

In a bowl, add water with ice. Set aside. Bring a pot of water to rolling boil. Add trimmed and cut asparagus. Cook for 2-3 minutes or until asparagus is dark green in color. Drain water. Add asparagus to water with ice. Set aside. 

Cook Pasta

Cook penne pasta according to package direction. Once cooked, drain pasta reserving 1/2 cup of liquid.

Make Pasta Sauce

To cook Pasta Sauce, while pasta cooks, heat a deep large sauté pan or skillet on medium heat. Add olive oil and shallot. Cook until onions are soft. Now add diced sun-dried tomatoes and garlic. Cook for 30 seconds to flavor the oil. Sprinkle flour on top and cook stirring often for 1 minute. Add lukewarm milk. Stir often until milk thickens and there are no lumps. Mix in 1/2 tsp salt, chicken stock, cream cheese and half of parmesan cheese. Stir until fully combined.

Assemble Asparagus Pasta

To assemble Asparagus Pasta, add green peas, cooked asparagus, lemon juice, cooked and drained penne pasta, half of chopped basil to the skillet with 1/2 cup of reserved pasta liquid. Toss the pasta with sauce sitting at the bottom of pan until pasta looks creamy and everything is well distributed. Taste and adjust seasoning with salt and black pepper. 

Garnish and Serve

Transfer hot and creamy Asparagus Pasta to serving bowls, sprinkle remaining parmesan cheese on the top. Garnish with remaining chopped basil leaves. Serve and enjoy.
