Delicious tender-crisp asparagus on a flaky, buttery puff pastry crust with plenty of cheese and Dijon mustard, this easy Asparagus Tart is casually elegant and perfect for brunches, Mother's Day, showers & parties, and more. 

Easy Asparagus Tart

puff pastry (thawed)

Tablespoons dijon mustard (optional)

asparagus (tough ends trimmed)

gruyere cheese (shredded)

parmesan cheese (shredded)

Preheat oven to 400 degrees F.  Line a baking sheet with parchment paper.  

Use a rolling pin to gently roll out puff pastry to an 11"x14" rectangle, then transfer to the parchment lined baking sheet.  Dock (a fancy baking term meaning to prick all over) the puff pastry with a fork, then brush all over with the mustard. 

Sprinkle gruyere over the puff pastry, leaving a 1" border on all sides. Arrange asparagus spears to be parallel with each other (or get fancy and arrange them on a diagonal!).  

Sprinkle with the Parmesan cheese.  Bake for 20-25 minutes or until the crust is golden brown and puffy.  Slice into squares a serve.  If desired, you can also drizzle a balsamic glaze (thicker and sweeter than balsamic vinegar) on top.

Easy Asparagus Tart Recipe

10x15 inch sheet frozen puff pastry (thawed at room temperature)

asparagus

gruyère cheese ((or cheddar cheese), shredded)

parmesan cheese (freshly grated)

heavy cream

olive oil

salt and pepper (as per taste)

Thaw Puff Pastry at room temperature for 40-45 minutes.

Preheat oven to 400 degrees F. Line a half sheet baking pan with parchment paper. set aside.

flour the surface and roll the puff pastry

Flour the surface and unfold the Puff Pastry. Roll using a rolling pin into a rectangle approximately 10x15 inches.

make 1-inch border around the puff pastry

Use a paring knife and make a 1-inch border around the puff pastry. Take a fork and piece the center leaving 1-inch border on the side.

transfer to a half sheet baking pan

Transfer to a half sheet baking pan lined with parchment paper.

combine gruyere cheese, shredded parmesan cheese, heavy cream

In a medium sized mixing bowl combine Gruyere Cheese, Shredded Parmesan Cheese, and just a couple of tablespoons of Heavy Cream. Stir well and make sure it is spreadable.

schmear sauce on the puff pastry leaving out 1-inch border on the sides

Use the back of your spoon or a knife to schmear the sauce on the puff pastry leaving out 1-inch border on the sides.

drizzle olive oil and sprinkle salt and pepper on asparagus arranged in a row

Arrange the asparagus in a row. Drizzle Olive Oil thinly, sprinkle a pinch of salt and some freshly ground black pepper.

brush the sides with egg wash

Use a pastry brush to brush the sides with egg wash. To make egg wash just combine one egg with a tablespoon of heavy cream or milk or plain water.

bake in the oven for 20-minutes and then cool it down in a wire rack

Place it in a preheated oven at 400 degrees F for 20-22 minutes. Transfer to a wire rack and allow it to cool down for about 10-15 minutes.

Serve with a fresh green salad and enjoy.

(10x15-inch) sheet frozen puff pastry, thawed

On a clean and lightly floured surface, prepare and roll out the puff pastry into a 10x15-inch rectangle. Transfer to a large half sheet baking pan lined with parchment paper.

Use a knife to gently score a 1-inch border around the pastry dough. Make sure to score the pastry with shallow cuts and do not cut through the pastry.

Use a fork to lightly poke holes all over the pastry dough (inside the scored border). Do not poke through the dough. This allows the steam to escape during baking so that the pastry doesn't puff up in the oven.

Sprinkle Gruyère cheese evenly over the pastry inside the border and top with asparagus in a single layer alternating ends and tips.

In a small bowl, add olive oil, balsamic vinegar, salt, and pepper, and stir well to combine. Brush the mixture evenly over the asparagus and top with Parmesan cheese.

In another small bowl, whisk together egg and milk. Brush the egg wash over the border on all sides.

Bake for 15 to 20 minutes until the crust is golden brown and puffy. Let the tart cool for 2-3 minutes before slicing and serving.

One of our favorite tarts to make in the Spring time and when asparagus is in season! So tasty!

I just made this as a trial run for a Mother's Day lunch this weekend.  I wanted to taste it as well as practice the timing.  This went together fast:  20 minutes to prep the ingredients and 10 minutes to put it together.  Baked it for 15 minutes.  And guess what:  IT IS SUPER TASTY!
This will be a perfect addition to my luncheon menu!

Asparagus Tart Recipe

Asparagus tips (tough ends trimmed)

oz cream cheese (softened)

garlic powder

black pepper

Sheet Puff Pastry (thawed, all butter)

Gruyere cheese (shredded, optional. Sub with vegetarian cheese if needed.)

Preheat the oven to 400°F/205°C. Line a baking sheet with parchment paper and set aside.

Drizzle olive oil over the asparagus, and season with salt and pepper.

To make the cream mixture, in a bowl combine the cream cheese with garlic powder, salt, and pepper. Give it a quick mix so that everything is well combined.

Unfold the thawed puff pastry on a lightly floured surface and roll into a 10 inch x 14-inch rectangle. Transfer to the prepared baking sheet, then using a sharp knife score the edges leaving a 1-inch border. Then using a fork, prick the puff pastry sheet.

Spread the cream cheese mixture over the puff pastry sheet inside the border, then sprinkle with gruyere cheese.

Top the cheese with the asparagus spears arranging them to be parallel with each other. Brush the border/edges with an egg wash.

Bake for 20-25 minutes or until the puff pastry is puffed and lightly browned.

Remove from the oven, cut into 6-8 squares, and serve warm or at room temperature.

Heat oven to 425 degrees; place oven rack in lower third of oven. Unfold pastry onto piece of parchment paper and rol ½ inch bigger on all sides. Slide parchment and pastry onto baking sheet. In medium bowl, beat egg. Lightly brush ½-inch border of egg around pastry.

Add ricotta, garlic and herbs cheese, and salt, pepper, and lemon zest into bowl with remaining egg. Mix well then fold in scallions. Spread onto pastry, leaving ½ inch border uncovered.

Top filling with asparagus using remaining pieces to fill in any empty spaces; drizzle with olive oil. Bake until crust is golden brown, 18 to 20 minutes.
