Easy Avocado Brownies. Healthy, extra fudgy, and gluten free! This healthy dessert recipe tastes decadent but is made of simple, wholesome ingredients.

Avocado Brownies

avocado

eggs (at room temperature)

coconut sugar (or light brown sugar)

maple syrup

unsalted butter (at room temperature (to make the brownies dairy free, use coconut oil))

vanilla extract

cocoa powder

Bob’s Red Mill Blanched Almond Flour

espresso powder (optional; will yield

baking soda

salt

dark or semisweet chocolate chips (divided (dairy free if needed))

Place a rack in the center of your oven and preheat the oven to 350 degrees F. Line an 8x8-inch pan with parchment paper so that two sides overhang like handles. Lightly coat with nonstick spray.

In the bowl of a food processor fitted with a steel blade, place the avocado, eggs, coconut sugar, maple syrup, butter, and vanilla. Process until it’s completely smooth and combined, stopping to scrape down the bowl a few times as needed so that no chunks of avocado remain.

To the food processor, add the cocoa powder, almond flour, espresso powder, baking soda, and salt. Process until smooth. Add 1/4 cup chocolate chips and pulse a few times so that the chips are roughly incorporated.

Scrape the batter into the prepared pan and smooth the top. Sprinkle over the remaining 1/4 cup chocolate chips. Bake for 25 to 30 minutes, until the top is set and a toothpick inserted in the center of the brownies comes out mostly clean with just a few moist crumbs clinging to it. Place the pan on a wire cooling rack and let the brownies cool for 30 minutes. With the parchment paper handles, lift the brownies from the pan and place them on the rack to cool completely. If time allows, refrigerate for at least 4 hours or overnight. (I find that these taste their best and fudgiest the next day.) Slice and serve.

Avocado Brownies (Flourless & Fudgy!)

Preheat the oven to 325ºF and line a 9-inch square baking dish with parchment paper. (I like to grease the pan first, so the parchment paper will stay in place.)

You can make these brownies in a single bowl, mashing the avocado with a fork until relatively smooth, or you can make them in a food processor to get rid of all the avocado chunks. (I prefer using a food processor, but I&#x27;ve had good results with both methods.)

In a food processor, combine the avocado (peel and pit removed), cacao powder, eggs, coconut sugar, almond butter, baking powder, vanilla, and salt. Process until smooth, stopping to scrape down the bowl as needed.

Fold in the chocolate chips, then pour the batter into the prepared pan. (Decorate the top with a few extra chocolate chips, if desired.) Bake at 325ºF for 45 minutes, or until the center of the brownies looks cooked-through. (You don&#x27;t want any jiggle when you shake the pan.)

Allow the brownies to cool completely. The avocado flavor is MUCH more pronounced if you try these warm, so please don&#x27;t be tempted to taste them until they have come to room temperature. You can place them in the fridge if you want to speed up the cooling process, or you&#x27;ll have to wait at least 2 hours for them to cool on the counter.

Slice the brownies into small squares and serve. It&#x27;s normal for this brownie to stick to the knife a bit with you cut them, since they are flourless and very fudgy. Leftovers can be stored on the counter for up to 48 hours, or in the fridge in an airtight container for up to a week.

Double Chocolate Avocado Brownies

Preheat oven to 350ºF and grease an 8x8&quot; baking dish with butter, coconut oil or cooking spray.

In a food processor or blender, combine; avocado, banana, maple syrup, and vanilla.

In a large bowl, combine; eggs, coconut flour, cocoa powder, sea salt, baking soda and avocado mixture.

Using a hand mixer, blend all ingredients together until well mixed.

Pour mixture into the greased baking dish and sprinkle chocolate chips over the top. You can also mix some into the batter if you like it extra chocolatey.

Bake for about 25 minutes or until set through.

Allow to cool completely before cutting. Cut into 9 squares and enjoy.

Avocado Brownie

tsp vanilla essence (optional)

110 g ground almond (1 Cup)

cocoa (This is half a cup)

tsp baking powder

Preheat your oven to 180 degrees Celsius or approximately 360 degrees Fahrenheit

Line a cake tin with baking paper or parchment paper, or use a silicone tin.   The tin I used was 20cm x 17cm  (approx. 8 x 7 inches)

Place the wet ingredients into your food processor (avocado, egg, maple syrup, and vanilla (optional) Blitz until you have a lovely smooth green purée

Add the dry ingredients, excluding the chocolate chips (ground almond, cocoa and baking powder).  Pulse until the mixture comes together to a well-combined consistent batter

Add the chocolate chips, pulse until they are just incorporated into the batter.

Pour the batter into the prepared cake tin I stud the top of the brownie with a few extra dark chocolate drops, it is an optional step but makes the brownie look even more appealing

Bake for 25-30 minutes until the top of the brownie  is set and when you pierce the brownie with a toothpick it comes out clean Allow to cool in the tin

Lift the cooled brownie out of the tin, Slice into 16 pieces
