Avocado soup is a delicious no-cook soup recipe that takes only minutes to make. Its fresh flavor and creamy texture make it both summery and cozy. Serve it chilled, straight from the blender, or warm it gently on a cool day. 

Creamy Avocado Soup

Optional toppings: diced avocado, toasted pepitas, hot sauce

Place the ingredients into your blender and blend on medium-high speed until smooth. Taste and add more salt, if wanted. If you'd like warm soup, pour it into a pot and heat it gently on medium heat. Do not let it boil.

Creamy Heirloom Tomato and Avocado Gazpacho

tomatoes

Persian cucumber

baby spinach leaves

red wine vinegar

hot sauce (optional)

granulated sugar

kosher salt

extra virgin olive oil (for drizzling)

tomato and cucumber (for garnishing)

Combine tomatoes, cucumber, spinach, avocado, basil, garlic, red wine vinegar, lime juice, hot sauce (if using), and ice cubes in the high-powered blender, such as a Vitamix. Puree until smooth. Add the sugar, and season to taste with salt and pepper. Pulse to combine.

Serve immediately (add additional ice and adjust seasoning if not cold enough), or chill in a covered container in the refrigerator. Garnish with a drizzle of good quality extra virgin olive oil, and chopped tomato and cucumber.

The gazpacho is best served the day it is prepared, but can hold in the fridge for an additional day.

Carrot Gazpacho

Carrot Juice ((480 milliliters) Fresh pressed)

Medium Avocado

tsp Fresh Chopped Ginger

Cilantro (loosely packed)

Parsley (loosely packed)

Sprinkle Sea Salt

Spring Onions

Black Pepper

Juice the carrots until you have 2 cups of carrot juice.

Peel and seed the avocado and chop the ginger.

Add the carrot juice, avocado and ginger to the blender jug and blend until smooth.

Add in the cilantro, parsley and sea salt and blend again.

Pour into bowls and garnish with spring onion and black pepper.

This Cucumber avocado gazpacho recipe is rich in flavor and comes together in under 30 minutes! It is creamy from the avocados, refreshing from the mint, and spicy from the jalapenos! Perfect for a light summer dinner.

Cucumber Avocado Gazpacho

avocado (ripe)

cucumbers (chopped)

Tbsp apple cider vinegar

Tbsp hemp seeds (optional)

Tbsp coconut yogurt (or sub with greek yogurt)

salt

tsp black pepper

olive oil

bread ((use gluten-free if needed))

Sliced Radishes

Preheat oven to 180C (356F). Lay baking paper on a baking sheet. Add shallot and garlic cloves and toss in olive oil and salt. Next place slices of bread. Roast for 10-20 minutes. It really depends on how old your bread is, so don&#039;t forget to give it a look now and then. Fresh bread takes longer to bake.

When the bread is nice and golden and the shallot and garlic caramelized, take them out of the oven. Carefully, while the bread is still warm, rub a whole, peeled garlic clove on each slice until it melts.

Cut the garlic bread into cubes. Set aside.

Croutons

In a blender or a food processor, add all of the ingredients for the gazpacho and blend until smooth. Then taste and adjust the flavor if needed- more almond milk for thinness, jalapeño for spice, vinegar and lime juice for a more tangy flavor, mint for freshness.

Transfer into a jar a covered container and refrigerate for at least 60 minutes before serving.

When chilled, serve the gazpacho with garlicky croutons and toppings of choice. We love to serve it with hemp seeds, radishes, yogurt, and more mint!
