Avocado Pasta Salad is a rich, creamy and totally delicious pasta salad loaded with fresh juicy tomatoes, crisp bacon and creamy avocados.&nbsp;

Avocado Pasta Salad

cherry tomatoes (diced)

bacon (cooked crisp & crumbled)

green onion (thinly sliced)

cilantro (chopped)

avocado (diced)

lime juice

Avocado

Lime (juiced)

cilantro

cumin

garlic powder

½ Cup Buttermilk

salt & pepper

Place all dressing ingredients in a blender and process until smooth.

Dressing

Cook pasta according to package directions. Drain and run under cold water.

Toss diced avocado with lime juice.

Combine all ingredients in a large bowl gently toss with dressing.

Refrigerate 1 hour before serving.

This is a colorful and fresh mains or side dishes that works for any occasion.

Strawberry Avocado Pasta Salad

(450 grams) pasta (any shape you prefer)

(150 grams) baby spinach

(453 grams) strawberries (hulled and sliced)

avocados (peeled, destoned and diced)

green onions

Balsamic vinaigrette (to taste)

poppy seeds

mint leaves (for optional garnish)

salt and pepper (to taste)

Cook the pasta according to package instructions, drain when done, and rinse with cold water so it stops cooking.

Add the cooled down pasta to a bowl along with the spinach, strawberries, avocado, green onions, poppy seeds and balsamic vinaigrette, Mix, taste, and adjust amount of dressing, as needed.

Allow salad to chill in the refrigerator for at least 1 hour, then garnish with mint leaves and  serve.

Creamy Avocado Pasta Salad

oz fresh baby spinach ((4 cups lightly packed))

Tbsp lemon juice (from 1 large lemon)

garlic (sliced)

avocados (medium) (2 for dressing, 1 for salad)

oz rotini pasta

sweet peas ((half of a 10 oz bag of Bird's Eye))

corn ((half of a 10 oz bag Bird's Eye))

baby tomatoes, halved

Cook pasta according to package instructions - I cooked 12 oz pasta in 4 Qts water with 1 Tbsp salt and boiled 10 min. About 4 min before pasta is done cooking, add frozen peas and corn and cook 4 min until veggies are crisp tender. Rinse under running cold water to chill pasta. Drain well and transfer to large mixing bowl.

In a food processor or blender, combine half of the spinach, 2 quartered avocados, 4 Tbsp lemon juice, 1 sliced garlic clove, 1 tsp salt and 1/4 tsp black pepper. Pulse until blended then add remaining spinach and blend until creamy and smooth.

Add avocado dressing to pasta bowl along with sliced tomatoes and 1 remaining sliced avocado. Toss salad together until evenly coated. Season to taste with more salt and black pepper.

My husband does NOT like mayo.  So this was a perfect recipe to try because I love pasta salads and was tired of making ones that call for a dressing. I added shredded chicken to mine. Hubby loved it!!

You think it might be good to add some chick peas?    I can’t wait to make this but my husband LOVES CHICK PEAS!   Thank you!

I thought it would be better, it’s blend and has a little bitter after taste. But definitely healthier than Alfredo pasta.
