Creamy Brussels Sprouts with Bacon, Apples and Gorgonzola Cheese

BACON Start the bacon in a cold pan (lay out your strips on the pan before turning on the heat). Cook bacon over medium-high heat until crisp and brown.&nbsp;

BRUSSELS SPROUTS&nbsp;While the bacon is cooking, cut off the stem end of the Brussels sprouts and cut each in half from top to bottom. Heat up water in a large pan, place Brussels sprouts in water, bring to a boil and cook for 5 minutes. Remove them from the pan and drain.

Remove bacon from the pan using a slotted spoon and cut it into 1/2-inch pieces. Keep the bacon fat in the pan and decrease the heat to low.

ONIONS and APPLES Add the onion to the bacon fat and cook them just until they turn semi-translucent, approximately 4 minutes. Add the salt and apples and continue to cook for another minute.

FINAL ASSEMBLY Add cooked Brussels sprouts, heavy cream and mustard and cook for 5 minutes until heated through. Stir in the bacon, Gorgonzola cheese and nutmeg. Serve immediately.

Balsamic Bacon Brussels Sprouts

Brussels sprouts

Preheat your oven to 425F/220C.

Cut the end off the Brussels sprouts, then slice them into quarters. Some leaves may come loose and that&#x27;s okay.

Add the Brussels sprouts and any loose leaves to a sheet pan. Toss with oil, salt and pepper.

Roast the Brussels sprouts for 25-30 minutes, stirring halfway through.

While the Brussels sprouts are cooking, slice the bacon into 1/2-inch thick pieces. Add the bacon to a pan on medium heat and cook until the bacon become crispy, stirring frequently. Use a slotted spoon to remove the bacon to a paper towel.

At the same time you&#x27;re cooking the bacon, add the balsamic vinegar to a small pot. Simmer this on medium heat for 10-12 minutes, or until it&#x27;s reduced by a third to a half. When it&#x27;s done, you should have about 3 tablespoons remaining in the pot. Then turn off the heat.

Drain off most of the bacon grease (you can render and save the bacon grease for future use!), but keep one tablespoon left in the pan.

Add the diced onion to the pan and cook on medium heat for 2-3 minutes, or until it becomes translucent. Add the crispy bacon back to the pan, give it a stir and turn off the heat.

When your Brussels sprouts are done, remove them from the oven. Add the onions and bacon and drizzle with the balsamic reduction. Stir everything together and serve.

Balsamic Glazed Caramelized Brussels Sprouts With Cranberries

Brussels sprouts (yellow leaves removes, ends trimmed)

Tablespoons extra virgin olive oil

bacon (cooked and chopped)

pecans (whole and pieces)

cranberries

balsamic glaze

Preheat oven to 400 °F.

Slice all Brussels sprouts in half.

In a medium bowl, toss together halved Brussels sprouts, 2 Tablespoons of extra-virgin olive oil, and kosher salt until well coated.

Arrange Brussels Sprouts cut side down on a rimmed baking sheet.

Roast in the 400 °F for about 25 minutes. During the last 5-10 minutes of roasting, flip them over for even caramelizing. The cut cut sides should be partially charred but not blackened.

How to roast Brussels sprouts:

Line a separate baking sheet with foil. Add the bacon slices in one layer. Bake in the preheated oven at 400 °F for about 20 minutes or until the bacon is done. You ca do it at the same time as roasting the Brussels sprouts.

Drain the bacon of fat and slice the bacon into small bites.

Cook the bacon in the oven:

Line a baking sheet with parchment paper. Add pecans in one layer.

Toast the pecans for about 5 minutes in a 350 °F oven until they&#39;re golden.

Toast the pecans:

To rehydrate the cranberries, briefly soak them in hot water by bringing  a small pot of water to a boil.

Add the dried cranberries to a medium bowl and pour hot water over the cranberries and soak them for about 10 minutes. Drain.

Plump Dried Cranberries:

In a large bowl, combine the roasted Brussels sprouts, chopped cooked bacon, toasted pecans, and the soaked dried cranberries.

Toss everything together. If desired, add an additional 1 Tablespoon of extra-virgin olive oil to the salad and mix.

Drizzle with 3 to 4 Tablespoons of your favorite balsamic glaze. (see notes for how to make your own)
