This is the juiciest, most delicious burger you&#x27;ll have. While it&#x27;s not truly 60/40 (more like 67/33) You&#x27;ll love the intense bacon flavor infused into the delicious beef.

60/40 Beef and Bacon Burger

Top Sirloin

Bacon (I use applewood smoked)

white onion (chopped very small)

garlic (minced)

BBQ Sauce (I use Stubb's Sweet Heat)

tbsp Cajun Spice (I use Tony Chacere's)

Worcestershire sauce

bread crumbs (as needed)

Cheese, peppers

Prior to grinding, chop bacon and sirloin into 1 inch cubes

Run meat through the grinder a few pieces at a time. After it has all been ground, mix it around and run the meat through again so the bacon and sirloin thoroughly mix.

Grinding the meat

Put freshly ground meat into a large bowl. Add egg, BBQ sauce, diced onion, minced garlic, cajun spice, and Worcestershire sauce and mix thoroughly.

If the meat is too wet, add breadcrumbs as needed.

Form into patties. You should have enough for at least 6.

Seasoning the meat

In a large saute pan over medium/high heat, cook the patties 3-4 at a time

Cook for approximately 5-6 minutes on each side. Flip carefully, as the fat and moisture in the burgers may cause it to break apart.

Top with cheese, if desired, and cover pan so the cheese melts.

Tasty Tip: Butter and broil buns in the oven to toast, and top with lettuce, pickles, grilled peppers and onions, etc. Enjoy!

Cup Mexican cheese

Preheat your oven to 350 degrees.

Slice and dice your bacon to the doneness you like in a pan, remember the bacon will cook a smidge more in the oven as well.

Spray a casserole pan with a nonstick spray.

In another skillet cook your sausage until it is cooked thoroughly and drain the fat.

Spray 9X13 pan with nonstick spray.

In a bowl combine together your tater tots, bacon, cooked sausage, and cheeses.

Whisk together eggs, salt, pepper, garlic powder, onion powder, and milk.

Put the tater tot combination in the bottom of the casserole pan.

Pour the egg mixture over the tater tots in the pan.

Bake for 65 minutes or until the eggs cook all the way through.

Prep the Ingredients: Cook and crumble the bacon. Set aside.

Mix: In a large bowl, combine the ground chuck, sour cream, ranch dressing mix, bacon, and cheddar cheese. Mix until just combined.

Form Patties: Divide the mixture into four equal parts and form into patties. Make a small indentation in the center of each patty.

Cook: Preheat the grill or pan to medium-high heat. Grill the patties for about 4 minutes on one side, then flip and cook for another 3-4 minutes for medium doneness.

Serve: Allow the burgers to rest for a couple of minutes. Serve on buns with lettuce, tomato, and your favorite toppings.

Blue cheese and bacon smash burger

beef mince (20% fat)

sesame burger buns, sliced open

Olive oil

beetroot,

gherkins,

For the bacon jam

smoked streaky bacon, finely chopped

shallot, finely chopped

light soft brown sugar

milliliters cider vinegar

For the blue cheese sauce

blue cheese, crumbled (any blue cheese will do)

tbsp soured cream

garlic clove, crushed

tsp cider vinegar

To make the bacon jam, put the bacon in a small pan over a low-medium heat. Cook for 5 minutes, stirring occasionally, then add the shallot. Cook for another 5-10 minutes until the bacon is crisp and the shallot has softened, then add the sugar and vinegar. Cook for 4-6 minutes until sticky, then keep warm over a very low heat.

For the sauce, mix together all the ingredients until combined with just a few chunks of blue cheese showing. Taste, then season with salt and pepper.

Put a wide cast-iron or stainless steel frying pan over a medium heat and wait for it to heat up. Meanwhile, divide the mince into 4 equal balls. Flatten the balls slightly to make them into thick pucks. Lightly toast the cut sides of the buns in the dry pan, then set aside.

Drizzle a little oil into the pan. Put the pucks in the frying pan, spaced out as far as possible. Use 2 frying pans or work in batches if needed. Using a metal spatula and a rolling pin (or a metal press, if you have one), flatten/smash the pucks into thin patties, pressing down hard and getting them as thin as possible. Season liberally with salt and pepper and cook for 2 minutes, pressing the patties back down if they start to rise in the centre.

Use a metal spatula to scrape the patties off the pan and flip them, season with a touch more salt and lots more pepper, then pour half the blue cheese sauce over each. Cook for another 2 minutes, then scrape them up and set aside.

Spread the bacon jam onto the base of the buns, top with the beetroot slices then put 2 patties on each bun base, sauce-side up. Top with the sliced gherkin, put the bun lid on top and wrap the burgers in foil. Leave for a few minutes for the flavours to meld, then unwrap and enjoy.
