This Cheesy Bacon Spinach Frittata is done in just 30 minutes! Packed with goat cheese, roasted red peppers and bacon, this frittata is perfect for Easter brunch!

Cheesy Bacon Spinach Frittata

bacon, diced

spinach,

red pepper

goat cheese

cherry tomatoes

eggs

2% milk

salt & pepper

chives

In a large bowl, whisk together eggs and milk. Season with salt &amp; pepper and set aside.

Heat a medium size oven safe skillet to medium heat.

Add bacon to pan and cook until slightly crispy, approximately 3-4 minutes.

Pour out bacon grease leaving a tablespoon still in the pan, place pan back on burner and add spinach

Add in roasted red peppers and egg mixture. Stir to mix everything together and top eggs with tomatoes and goat cheese.

Transfer pan to oven and bake for 10-12 minutes or until the frittata has set. (the eggs don&#8217;t wiggle when you shake the pan)

Keto Frittata with Brie and Bacon

bacon (chopped)

Cook the chopped bacon in a 10-inch oven-proof skillet over medium heat until crisp. Remove the bacon with a slotted spoon and let drain on a paper towel lined plate. Leave at least 2 tbsp of bacon grease in the skillet (if you are using cast iron, you may want to leave more) and remove from heat. Let the skillet cool before proceeding.

In a large bowl, whisk the eggs with the cream, garlic, salt and pepper and about two thirds of the cooked bacon. Set the skillet over medium low heat and swirl remaining bacon grease to coat bottom and sides.

Pour the egg mixture into skillet and cook undisturbed until edges are set up center is still somewhat loose, 7 to 10. Layer the sliced brie overtop. Sprinkle with the remaining bacon.

Preheat the broiler to high and set an oven rack on the second highest setting in the oven. Broil until puffed and golden brown,2 to 5 minutes, watching carefully to make sure it doesn&#039;t burn.

Remove and let cool a few minutes before serving.

I am not a fan of brie, and I had ham, so I made a ham and cheddar version of this - those were the only two things I changed. I have an electric glass top stove and my skillet was ceramic. It took way longer than I expected to reach the correct level of doneness prior to putting in the oven, and even though I had it at 275F (that pan is only oven safe to 300F), it ended up burned on the bottom...... it looks amazing though. Any ideas why it would have behaved that way? I did make sure to distribute the ham evenly and the sliced cheddar went over top, like you suggested for the Brie. For my version I would have added more garlic, but that is entirely a personal preference.  Let me say here that as someone in the process of reversing T2, and maintaining remission for life, I adore your recipes and they have been lifesavers and bright spots when everything in my life otherwise went dark. Thanks to you I'm actually recovering some of my 'excited and curious' about food again.

Made ours today with items that needed to be eaten up: red, green peppers and onions, dried curly kale, a couple of slices of Black Forest ham chopped and an 8 oz bag of uncured bacon bits all sautéed in hickory bacon fat, plus a rather hard 1/2 wheel of Brie. In my cast iron pan. Oh my was this tasty! Perfect instructions! Will definitely make again…
