Bacon Wrapped Dates with Goat Cheese

bacon (I find that thin bacon works better)

dates

goat cheese

toothpicks

Preheat the oven to 350 degrees Fahrenheit.

Slice the dates lengthwise on one side to create an opening. Remove the pit.

Using a spoon, stuff a small amount of goat cheese into the cavity of each date and press the sides together to close.

Cut the bacon slices in half. Wrap each date with a slice of bacon and secure with a toothpick.

Arrange evenly on a baking sheet with raised edges (otherwise grease will get everywhere) and bake for 10 minutes. Remove the dates and use the toothpick to turn each one so it&#8217;s laying on its side. Bake for another 5-8 minutes, until browned to your liking, and turn the dates to the other side and repeat. Remove from the oven, place on a paper towel lined plate, and let stand for 5 minutes before serving.

I made mine with feta, but I like the idea of goat cheese.  It hits all the right notes.  Great party food.

I had these served at a wine and cheese and they are seriously the best thing ever. I was literally reminiscing yesterday about how fabulous they were. They are that good- I literally daydream about them.

I tried them with the Precooked bacon and it is a bit stiff and didn't wrap good enough.  Also, not enough fat in the Precooked to really sizzle the date and cheese. By the way, I tried Goat Cheese and didn't care for it but tried them again with Cream Cheese and loved it much more.

I live in Miami I had these exact goat cheese dates at high end bar restaurant on Los Olas boulevard in Fort Lauderdale. They were a bit expensive you only got 4 but the flavor was stupendous. I googled bacon wrapped dates and I found your recipe and I look forward to your other recipes. Thanks Ray

Plump and sweet Medjool Dates are stuffed with creamy goat cheese and wrapped in bacon.

Bacon Wrapped Dates

lb medjool dates ((I had 28 pieces))

log* soft goat cheese

ounces** bacon ((14 slices))

Preheat the oven to 375F. Line a half sheet pan with foil or parchment paper.

Using a paring knife, slice through the top half of each medjool date, then pull the two sides apart to expose the pit. Do not slice all the way through. Discard the pit, and also check the inside to make sure there are no signs of bugs or black mold (very rare, but important to check).

Stuff each date with about a tablespoon of goat cheese. I find this easiest to do by using a butter knife to carve out a hunk of cold goat cheese and pressing it in, using the knife.

Cut the bacon slices in half, then wrap each date with a bacon half, securing with a toothpick by pushing it through the entire piece.

Place all the bacon wrapped dates on the tray and bake for 30 minutes, flipping the dates halfway through. This is essential for even cooking of the bacon.

Let the dates cool enough to handle, then transfer to a platter to serve. Enjoy!

Medjool dates (pits removed)

goat cheese (softened)

bacon (cut in half)

maple syrup

cooking spray

parsley

Preheat the oven to 400 degrees F. Coat a sheet pan with cooking spray.

Use a small spoon or a piping bag to stuff each date with about 1 teaspoon of goat cheese.  Press each date shut.

Wrap each date in a piece of bacon and secure with a toothpick.

Brush the maple syrup all over the wrapped dates.

Bake for 15-20 minutes, turning occasionally, until bacon is browned and crispy.

Sprinkle with parsley then serve immediately.

Bacon wrapped dates stuffed with cheese and pecans make the perfect appetizer for pretty much any event!

Bacon Wrapped Stuffed Dates

Medjool dates

feta cheese crumbles

pecan

tsp black pepper

salt

tsp crushed chili flakes (for garnish)

parsley (for garnish)

Prepare

Preheat oven to 400°F and line a large baking sheet with parchment paper.

Slit dates

Using a sharp knife, slit each date in half lengthwise.

Make filling

Mix together feta, pecan pieces, pepper, and salt (if using).

Stuff dates

Fill each date with about 1 tsp of filling mixture.

Wrap dates

Wrap each stuffed date in half a piece of bacon, secure with toothpick and place on baking sheet.

Bake

Bake for 20 minutes, remove from oven and brush with maple syrup. Flip dates over and brush other side with syrup then return to oven and bake an additional 10 - 15 minutes, until bacon is desired crispiness.

Garnish

Sprinkle with chili flakes and parsley before serving.

These bacon wrapped dates are a favorite snack! Dates stuffed with goat cheese, wrapped in bacon, cooked until crispy and warm and then drizzled in hot honey. Sweet and salty perfection!

Hot Honey Bacon Wrapped Goat Cheese Stuffed Dates

medjool dates

bacon

hot honey, (for drizzling)

Preheat the oven to 400 degrees F.

Slice the dates open lengthwise (do not cut the entire way through!) and remove the pits. Stuff the inside of the dates with some of the goat cheese.

Cut each slice of bacon in half and wrap half of the slice around a date. Secure with a toothpick. Place the dates on a baking sheet.

Bake for 10 minutes, then flip the dates over (I use kitchen tongs for this) and bake for 10 minutes more, or until the bacon is crispy and crunchy on all sides.

Remove the dates and drizzle with hot honey.

Serve immediately!

I stuffed mine with cream cheese and they were amazing! The hot honey adds a next level flavor. I let guests choose if they wanted hot honey (not everyone likes spice) but I thought it was imperative. Not overly sweet.
