This Easy Baked Cabbage is a tasty vegan side dish that you’re going to love. Full of flavor and roasted to perfection, this easy to make veggie is delicious.

Easy Baked Cabbage

cabbage (about 2 lbs.)

garlic powder

paprika

salt

tbsp. plant-based butter

Cut the cabbage into quarters, and then cut out the core. Slice each quarter and then cut it crosswise to create thin shreds of cabbage. 

Place the cabbage shreds into a large mixing bowl, and add the paprika, garlic powder, and salt. Melt the butter and pour it over the other ingredients. Mix well.

Transfer the cabbage into a large baking tray. Using a wooden spoon or spatula, smooth the seasoned cabbage until it lays evenly across the pan.

Bake it for about 25 minutes at 400 degrees Fahrenheit, or until it is cooked through and nicely roasted around the edges. Serve immediately.

Roasted Cabbage and Carrots with Apples has a smooth and slightly sweet flavor making it the perfect side dish to a savory meal. Baking it in the oven assures that the vegetables are colorful and have a delightful crunch. 

Roasted Cabbage and Carrots with Apple

green cabbage (medium)

carrots

apples

yellow onion (sliced thickly)

Salt and Pepper

Extra Virgin Olive Oil

Preheat oven to 400°F.  Line a rimmed baking sheet with aluminum foil.

Cut the cabbage in 4 quarters.  Remove the core and slice each quarter into 4 pieces (16 total)

Peel carrots and chop into thick pieces.

In a large bowl Combine cabbage, carrots, apples, and onion. Drizzle with olive oil. Sprinkle with salt and pepper.

Spread out on the rimmed baking sheet. Bake 20 minutes, turning halfway through or until vegetables are lightly browned and beginning to soften.
