baked churro cookies

These mouth-watering copycat Crumbl churro cookies will remind you of biting into a fresh hot churro, all in the comfort of your own home. The cookie itself is a moist yet fluffy light treat, and the cinnamon sugar frosting gives it the rich and delectable flavor you crave from a churro. This recipe is great for entertaining guests!

Copycat Crumble Churro Cookie

unsalted butter (softened)

brown sugar

sugar

eggs

vanilla

tbsp corn starch

tsp baking powder

½ tsp baking soda

cinnamon

salt

all-purpose flour

powder sugar

Preheat your oven to 350°, and line a baking sheet with parchment paper. Set aside.

Cream together butter, brown sugar, and granulated sugar until light and fluffy. Add in eggs and vanilla, mix well.

Add corn starch, baking powder, baking soda, salt, and cinnamon, and mix well.

Slowly mix in flour until well blended.

Scoop dough using a 1/3 cup and roll into a ball.  Roll dough into cinnamon and sugar mixture until dough is completely covered. Place cookies on the lined cookie sheet evenly spaced apart. Bake for 8-10 mins. until the cookie is slightly golden around the edge.

Bake in a preheated oven for 12-14 minutes or until edges are golden brown and tops are no longer glossy.

Remove from the oven and let them cool for a couple of mins before placing them on a cooling rack.

Using a hand mixer beat butter and vanilla until light and fluffy. Add in cinnamon, and brown sugar until well combined. Slowly add in powder sugar until mixed well.

Once the cookies are completely cooled, frost and sprinkle with leftover cinnamon and sugar mixture.  Enjoy!
