The BEST Egg Bites Recipe

eggs

milk

gruyere or cheddar cheese, grated

tbsp cooked bacon, crumbled (2-3 slices) (*Optional)

½ tbsp fresh chives, chopped

tbsp butter, melted

tbsp ketchup (*Optional)

Preheat oven to 275°F.

If not already done, cook your bacon in the oven or in a skillet until crispy. Crumble into bits and set aside.

(Reserve 2 tbsp of cheese and 1/2 tbsp of bacon.) Add eggs, milk, bacon (if using), cheese, chives and ketchup in a bowl. Whisk well!

Using a mini muffin tin, brush melted butter generously inside each cup. (You can also use nonstick spray or liners to prevent them from sticking. If using liners, spray them as well.)*You can also use a regular sized tin if you wish. Using a mini ice cream scoop or small ladle, add the egg mixture to each muffin cup making sure to scoop the bacon/cheese sitting on the bottom of the bowl! Fill each cup to the brim then top with remaining cheese and bacon.

Bake for 10-15 minutes on the MIDDLE rack for mini egg muffins and 16-20 minutes for regular sized egg muffins.*Depending upon your oven and the size of your muffin tin, they may need to bake longer! Try to keep from opening and closing the oven since this will drop the temperature. You are looking for the center to be slightly jiggly. You do NOT want to overcook your eggs!

As soon as you can handle them, GENTLY use a knife or small silicone spatula to loosen the outside of each egg cup to allow your bites to slide out. Turning the tin upside down helps.Do not wait for them to cool or they will be tougher to remove.

Eat immediately or store in the fridge for 3-4 days in a sealed container.

Starbucks Copycat Egg Bites NO SOUS VIDE!

These easy Broccoli Cheddar Baked Egg Bites are a healthy, high-protein breakfast recipe (thanks to cottage cheese!) that you can meal-prep and freeze. They might even be better than Starbucks!

Broccoli Cheddar Baked Egg Bites with Cottage Cheese

cottage cheese

cheddar cheese (divided)

tsp black pepper

tsp salt

broccoli (chopped)

spinach (chopped)

Preheat your your oven to 300F and preparing a silicone muffin tray with non-stick spray.

Add eggs, cottage cheese, half of the cheddar cheese, and salt and pepper to a blender. Blend until everything is smooth and well-combined.

Pour the egg mixture evenly into the prepared muffin tray, filling each slot about half way (the egg bites will rise in the oven). 

Divide the chopped broccoli and spinach evenly over the egg mixture in the muffin tray. Then sprinkle the remaining cheddar cheese over each.

Sprinkle with more salt and pepper (optional), then place the muffin tray in the oven and bake for 30 minutes at 300F. Remove from the oven and let cool slightly before removing from muffin tray.

I used a hand mixer and while some of the lumpy parts of the cottage cheese and a tiny amount of cheddar cheese wasn’t completely mixed, they still came out good! I also added orange bell peppers and played around with putting only broccoli in some and both broccoli and bell peppers in others. 

These are perfection!! I’ve made so many egg bites that didn’t have the right texture and these FINALLY did. Sooo delicious!!! The silicone muffin tin is key. I’m going to make them again experimenting with different toppings!

Preheat Oven

Preheat your oven to 325°F (163°C) to prepare for baking the egg bites.

Blend Ingredients

In a blender, combine the eggs, Greek yogurt, shredded cheese, salt, and black pepper. Blend for 10–20 seconds until the mixture is completely smooth for a creamy texture.

Prepare Muffin Tin

Grease your muffin tin thoroughly with olive oil or nonstick spray to prevent sticking.

Add Mix-ins

Distribute the diced bell pepper, chopped spinach, and optional diced onion evenly into each muffin cavity.

Fill with Egg Mixture

Pour the blended egg mixture into each muffin cavity, filling them about three-quarters full.

Optional Water Bath

For extra silky egg bites, place the muffin tin on a baking sheet and add hot water to the sheet around the tin to create a water bath.

Bake

Bake in the preheated oven for 18 to 22 minutes until the egg bites are just set in the center.

Cool and Remove

Let the egg bites cool for 5 minutes, then gently loosen the edges using a silicone spatula and remove them from the muffin tin.
