My Baked Feta Cheese with Olives is an appetiser that everyone will love! This Mediterranean dish has feta cheese, baked to perfection with fresh herbs, chilli and aromatic citrus peels, all doused in extra virgin olive oil. What’s more, it is quickly and easily prepared - it can be on your table and ready to enjoy in just 30 minutes!

Baked Feta Cheese with Olives

200 g (7 oz) Greek feta cheese

(60 ml) extra virgin olive oil

orange rind

lemon rind

tbsp (20 ml) lemon juice (See Note 1)

olives (See Note 2)

rosemary leaves (See Note 3)

Preheat the oven to 180 Degrees C (355 F).Cut chilli into thin strips. Remove the rosemary leaves from the sprig and prepare the citrus rind.

Place the feta in a small oven-proof dish - See Note 5.Pour the olive oil over the feta.

Add the strips of lemon and orange rind, then pour over the lemon juice.Distribute the olives around the feta. Sprinkle with the rosemary leaves and chilli.

Place the feta into the oven and bake about 20 minutes, until hot and bubbling.You will know it’s ready when the edges of the feta become slightly browned. If you want a little more colour, place it briefly under the grill/broiler.

Remove from the oven and serve with hot crusty bread, warmed pita or toasted ciabatta.

In a large bowl, combine the beets, feta cheese, and parsley. Mix to combine.

In a small bowl, combine the oil, vinegar, lemon juice, garlic, salt and pepper. Whisk until smooth.

Pour the dressing over the salad ingredients, then toss to coat.

Serve and enjoy!

I just made the Beet and feta salad and it was delicious! The only change I made was adding a few dashes of balsamic vinegar to the dressing. Very good and I will definitely make it again!

Excellent! I used half of a quart of home canned beets. I had everything on hand except the parsley, so I used cilantro instead. Very nice. This is a keeper and I can't wait to try it this summer when everything is on hand. Now, on to make beet brownies with the rest of the beets. thanks

I steamed the beets and used it in this salad. It was so good. We loved it with our pizza.

I love beets but haven't tried them in a salad. Boy, what a great dish! The sweet beets and the tangy feta were a perfect match!
