Melt-In-Your-Mouth Italian Meatballs

bread crumbs

milk (or beef broth)

onion (finely diced or grated)

parmesan cheese (preferably real Parmigiano-Reggiano)

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a baking mat.

In a large mixing bowl, add Italian bread crumbs and milk. Combine well and set aside while preparing the other ingredients, for at least 5 minutes.

Add ground beef, onion, garlic, egg, salt, black pepper, parmesan cheese, and parsley into the soaked bread crumb mixture, and mix with your hands until just combined. Do not overmix.

Portion onto the prepared baking sheet (using a cookie or ice cream scoop will make it easier). Wet your hands with water, and roll meatballs into 2&quot; diameter balls.

Bake for about 15-20 minutes, or until the meatballs have reached an internal temperature of 165˚F (74°C). Remove from oven and drain off any excess fat. Serve with your favorite sauce and enjoy!

1⅓ lb ground beef (see Note 1)

Mix meatball mixture

Preheat oven to 400°F. Add the milk and breadcrumbs in a large mixing bowl and stir until the milk is absorbed. Then add the remaining ingredients (including any optional spices) and mix well until combined.

Roll meatballs

Roll the mixture into 2 inch diameter meatballs and lay them on a lined baking tray. Wet your hands with water or oil to prevent sticking. See Note 5 for consistent sizing.

Bake meatballs

Bake in a preheated 400°F oven until fully cooked, about 18 to 20 minutes depending on size. The internal temperature for beef meatballs should be 160°F. If you mixed in ground pork, chicken, or turkey, the internal temperature should be 165°F.

Polpette Al Sugo or classic Italian Meatballs are soft, juicy bite-size nuggets cooked to perfection in rich tomato sauce.

Polpette - Italian Meatballs In Rich Tomato Sauce

shallot (, grated or finely chopped)

Parmesan cheese (, grated)

milk + more if needed

tomato puree (+ approx. ¼ cup water)

In a large bowl add ground beef and crumble it with a wooden spoon or simply using your fingers.

Add finely chopped shallot. I like to use a microplane grater as it extracts all the juices to go with the meat and minces the shallot really well.

Add ground nutmeg, breadcrumbs, egg(s) and Parmesan cheese.

Mix everything well with your hands.

Slowly pour in the milk. Mix again until smooth and even texture.

Add salt and pepper.

If the mixture feels too dry add some more milk, if way too soft, almost liquid-y  - add more breadcrumbs.

An ideal meatball mix should be moist, easy to roll in your hands and hold the shape.

Prepare meatball mixture

Preheat oven to 400 F.

Pinch of about an ounce of meat and roll it between the palms of your hands giving it a smooth round shape with no cracks.

With an ounce of meat you’ll have medium size meatballs, think walnut size.

Of course you can make your meatballs smaller or bigger, depending your preference.

Place rolled meatballs on a baking sheet (see notes!).Line with parchment paper to avoid extra cleaning.Bake in the oven for 15-20 minutes.

In a large skillet pan add a generous drizzle of extra virgin olive oil.

Add baked meatballs, tomato pure (clean the can/bottle with about a quarter cup water and add to the sauce).

Add garlic cloves crushed with a flat knife, handful of fresh basil leaves and generous drizzle of dried oregano.

Bring to simmer and cook on low heat for 15-20 minutes.
