This recipe for pork loin is one of those recipes that you will make for years to come. Oven-roasted pork loin is easy to make and when it’s cooked right, it will be a favorite of your family for years to come. It’s quick to prepare and tastes like you slaved over it for hours.

Pork Loin Roast | How to Cook Pork Loin

tsp Garlic Powder

Take the meat out of the refrigerator about 30 minutes before hand to let it warm up a bit. That will ensure a more even temperature for cooking it.

Put those spices on your pork loin roast. I like to use a baking tray or a large cutting board to place the meat on while we season it. We use Salt, Pepper, Onion Powder, Garlic Powder, Paprika, and Montreal Seasoning.

Cover the meat with the seasonings, especially on the top but also on the sides and bottom if you can. You can even press them on better with your hands so that they will adhere better.

Transfer the pork loin roast into the baking pan that you will be using to bake it in.

The last preparation step is to make the sauce and pour it over the top of the pork loin.

In a saucepan melt the butter and add the olive oil. Blend them together well.

Add dried parsley and stir until blended.

Pour it over the pork loin, while attempting to cover as much of the meat as possible.

Place your pork loin in the oven and set the timer for the amount of necessary time. If you make a 3 pound roast, at 20 minutes per pound, would be 1 hour.

When the pork loin reaches 145 degrees it is time to take out the roast.

Let it rest on the counter for 5-10 minutes.

Stuffed Pork Loin

olive oil ((extra virgin))

small onion ((or half of a large onion

sea salt

garlic

black pepper

mushrooms ((baby portobello - chopped small))

baby spinach ((chopped medium/small))

pork loin ((blot dry with paper towels))

salt

garlic powder

dijon mustard

walnuts ((chopped))

Mexican cheese

thyme ((ground))

apple ((chopped small))

As you cook the onion, use that time to chop the other vegetables to save time.

Heat a large sauté pan on medium heat. Once that heats up, add olive oil. Once the oil shimmers, add the chopped onion and sauté for 7 minutes or until translucent. Stirring occasionally.

Add salt, pepper, crushed garlic and stir and cook for 1 minute.

Add mushrooms, stir and cook for 2 minutes.

Add chopped spinach, thyme, and stir and cook for 1 minute or until the spinach wilts. Set aside to deal with the pork.

Preheat oven to 350 F.

Unwrap the pork and place it on its side on a cutting board. Take a sharp knife and butterfly the meat - cut it on the equator but not all the way through. Leave an inch between the edge and where you stop cutting. Open it like a book and place it back on the cutting board.

Most likely the pork won&#39;t be equal thickness so place a few pieces of plastic wrap on the pork, take a meat tenderizer and pound it with the side of the meat mallet until the thickness looks more uniform.

Sprinkle on kosher salt, garlic powder and spread the mustard evenly on the pork.

Sprinkle on the shredded cheese, walnuts, and apple chunks.

Lastly, spread on the vegetable mixture. Fold the pork back on itself like a book and secure it with either some metal skewers like I did, or use kitchen twine.

Place the pork on the rack of the roasting pan with the fat cap facing up. Add the meat thermometer, and bake for 70 - 80 minutes. The internal temperature should be 145 degrees Fahrenheit.

When it&#39;s done, tent a few pieces of aluminum foil over the pork and let it rest at least 10 minutes before cutting the meat.

2.5 lb Pork Loin

Granny Smith Apple (Diced)

Cup Dried Craisins

Cup Pecans (Diced)

Cup Seasoned Bread Crumbs

Cup Basil

Nutmeg

Tbs Rosemary (Fresh)

Bunch Green Onions (Diced)

tsp Thyme

Pepper

In a bowl combine stuffing ingredients.  Diced green apples, cranberries, chopped pecans, bread crumbs, nutmeg, basil, rosemary, green onions, thyme, and salt and pepper.  Stir to combine and set aside.

Lay your pork loin on a cutting board and with a sharp knife butterfly the pork Loin but do not cut all the way through. Open the pork loin like a book and now you will spread the filling on the pork

Optional – You can use a meat mallet to pound out the pork loin to flatten and keep the thickness uniform.

From the long side, begin to roll up the pork loin making sure to keep the stuffing inside

Use 3-4 pieces of butcher string to tie up the stuffed pork loin

Heat 2 tbs olive oil in a frying pan and heat over medium high heat on stove.

Brown all sides of pork loin in hot olive oil.  About 1 minute per side.

Place Pork Loin in a roaster pan, 9×13 pan, or Dutch Oven

Tent with foil

Bake at 350 degrees for 40-55 minutes

Remove from oven checking internal temperature.  Pork should reach an internal temperature of 145 degrees to reach a slight pink stage or 165 degrees for well done

Allow to rest for 5 minutes before slicing

Slice and Enjoy
