Treat yourself to this creamy, decadent Baked Ricotta recipe ... it&#039;s easy to make and so delicious!

Baked Ricotta

garlic

extra virgin olive oil

kosher salt

(15-ounce) container ricotta cheese

mozzarella cheese, (divided)

lemon

truffle salt

Preheat oven to 400 degrees.

Remove excess papery skin from garlic head, leaving cloves intact. Use a sharp knife to slice tops off cloves.

Drizzle garlic with oil, then rub oil over cloves. Sprinkle garlic lightly with salt.

Wrap garlic in foil, then roast for 40 to 50 minutes, or until browned and tender. Set aside to cool.

Prepare Roasted Garlic:

When garlic is cool enough to handle, squeeze garlic cloves from skins, then roughly chop.

Add garlic, ricotta, HALF the mozzarella, lemon zest, and truffle salt to a medium bowl. Mix well.

Lightly oil a medium, oven-safe skillet (or pie pan), then add ricotta mixture. Sprinkle with remaining mozzarella cheese.

Bake ricotta until hot and browned around edges, about 10 to 15 minutes.

Serve Ricotta Dip hot with bread and veggies, such as carrots and grape tomatoes. Enjoy!

Prepare Baked Ricotta:

This Baked Ricotta with parmesan and herbs is an easy and simple appetizer. Delicious served warm or cold, pair it with crackers or veggies.

ricotta ((350 grams))

oregano

salt

black pepper

olive oil

grape tomatoes (chopped)

basil leaves

Pre-heat oven to 400F (200C).

In a medium bowl beat the egg with a whisk, then add the ricotta cheese, ¼ cup of parmesan cheese, oregano, salt and pepper, whisk together until completed combined.

Spoon the ricotta into a small 5-6 inch (14 cm) oven safe baking dish, then sprinkle with the tablespoon of parmesan cheese. Bake for approximately 20-30 minutes or until golden brown on top. Remove from the oven and drizzle with a tablespoon of olive oil. Serve warm or room temperature.

In a small bowl toss together the chopped tomatoes, basil, oregano, salt and olive oil. Serve over the baked ricotta if desired.

Fantastic recipe!  I love, love, love it!  My store was out of the single 4oz burrata cheese and then I remembered I had a ricotta to use up and found your recipe.  Now I may not need burrata again.  The chopped tomatoes and herbs and olive oil is really delicious, too!

Italian Baked Ricotta is a delicious recipe that can be used as a dip for crackers, a spread for bruschetta, or tossed with hot pasta!

Italian Baked Ricotta

ricotta cheese

mozzarella, divided

parmesan, divided

garlic,

thyme

lemon,

red pepper flakes

Preheat oven to 425 degrees. Coat a small casserole dish or baking pan with cooking spray; set aside.

In a large bowl combine the ricotta, half of the mozzarella and parmesan, olive oil, garlic, thyme, lemon juice and zest, kosher salt, and red pepper flakes. Spread the mixture into the prepared baking dish and top with remaining mozzarella and parmesan cheese.

Bake for about 20 minutes, or until the ricotta is hot and bubbly. To brown the top of the cheese, place under broiler for a minute or two until golden in color. Serve with toasted bread if desired.

A Gourmet Italian food store in my neighborhood (NYC) sells baked ricotta, but it is in the form of a very light cake.  It is not spreadable.  It is very thinly sliced and eaten plain, as I would a pound cake.  It is so very delicious. Do you know to what I refer with this particular "baked ricotta"?
