basil cream sauce

Creamy pasta is an easy dinner dream. Al dente pasta served with basil cream sauce is the perfect vegetarian meal and can be ready in 20 minutes.

Pasta with basil cream sauce

butter

onion (finely chopped)

garlic (minced)

basil (roughly chopped)

herbs

cream

lemon juice

salt and pepper (to taste

500 g pasta (cooked)

Melt the butter in a pan then add the onion. Cook until soft and translucent.

Add the garlic, basil and dried herbs (if using) and cook for another 30 seconds.

Pour in the cream and allow to come to a simmer. Simmer for 5-7 minutes until the sauce covers the back of a spoon easily.

Transfer sauce to a food processor or blender (or use an immersion blender) and blend until smooth.

Pour the sauce back into the pan and add lemon juice, salt and pepper to taste. Bring to a simmer and add cooked pasta or serve over cooked chicken.

Fresh basil and pimientos make up the basil cream sauce that is served over crispy chicken. This Chicken with Basil Cream Sauce is a great end of summer supper!

Chicken with Basil Cream Sauce

milk

bread crumbs

boneless, skinless chicken breasts, 8-12 oz each, cut open lengthwise into 4 thinner pieces

chicken broth

heavy whipping cream

(4 oz) chopped pimientos, drained

Parmesan cheese

basil

pepper

Melt the butter in a large saucepan over medium heat.

Place the milk in a shallow dish. Place the breadcrumbs in a second dish. Dip each of the pieces into the milk, then into the breadcrumbs. Transfer to the skillet and allow to cook until browned on both sides and cooked through, about 5 minutes per side. Transfer the chicken to a cooling rack placed over a baking sheet and keep warm in the oven.

Add the broth to the skillet. Bring to a boil and whisk to bring up the browned bits off the bottom of the pan. Add in the cream and the pimientos. Cook until slightly thickened. Reduce the heat, then add the Parmesan cheese and basil. Season to taste with pepper.

Serve the basil cream sauce over the chicken.

I've made this several times now - and my entire family (four generations at the table last time!!) just LOVED it!  My eldest granddaughter crept down the stairs early Saturday morning and begged me to make her some scrambled eggs with "that sauce".  Which I did.  Because, hey........Grandma here.  :-)
