How to Cook the Fluffy Basmati Rice!

water

salt

cup basmati rice

ghee (or sub olive oil)

black mustard seeds

cumin seeds

fennel seeds

curry leaves

olive oil

garlic

coriander seeds

bay leaves

fresh parsley and lemon zest

Bring water and salt to a boil. Add rice and simmer at a low boil, uncovered over medium heat until rice is tender, 7- 10 minutes. Drain, and let stand over a strainer for 5 minutes.

For Indian Tempering oil: Heat ghee over medium heat. Add seeds, salt and leaves, and saute until seeds begin to crackle- about 30-60 seconds. Turn heat off.

Place rice in a serving dish and pour tempering oil over top. Serve immediately!

Flavor was good but still didn't hold it's shape like the Indian restaurants! 

What am I doing wrong?

Recipe video above. You need more than just curry powder for a great Curried Rice! Basmati adds a beautifully nutty aroma to this rice recipe. Spiciness:&nbsp;Warm hum, not overly spicy. Not intended to be a full-on authentic Indian recipe, but leans more towards Indian than unflavourful Western curry recipes (you know the type I mean!)

Curried Rice (Basmati rice)

tsp yellow curry powder ((Note 1))

tsp cumin

coriander

paprika

tsp chilli powder ((adjust spiciness to taste) (Note 2))

(3 tbsp) butter ((or ghee

onion (, finely chopped)

garlic (, minced)

tsp ginger (, finely chopped or grated)

(275 grams) uncooked basmati rice ((Note 4))

carrot

(560 ml) chicken

(300 grams) frozen peas

tsp black pepper

(150 grams) cashews (, roasted, unsalted)

coriander/cilantro leaves (, finely chopped)

Yogurt (, for serving (optional))

Rinse rice until water runs pretty clear, then drain well. (Note 4)

Melt butter in a small to medium pot (or large saucepan) over medium high heat.

Add garlic and ginger, cook 30 seconds. Add onion and cook for 2 minutes until partly translucent.

Add carrot and cook for 2 - 3 minutes until softened and sweet.

Add rice and stir to coat all the grains in the oil.

Add Spices and mix to coat the rice.

Add broth, peas, salt and pepper, stir. If any rice is protruding above the surface, poke it under the liquid.

When the entire surface of the liquid is simmering, stir once, place lid on and immediately turn heat down to LOW.

Cook for 14 minutes, do not peek while cooking!

Lift lid slightly and quickly tilt pot to check to ensure liquid has been absorbed. Clamp lid back on and remove from heat.

Stand for 10 minutes, undisturbed.

Use a rubber spatula to gently fluff the rice. (Note 6)

Add most of the cashews and coriander, stir through.

Transfer to serving bowl, sprinkle with remaining cashews and coriander. See in post for serving ideas.

Recipe video above. The most common mistake people make when cooking rice is using too much water which makes rice gummy and gluey, especially if you also rinse the rice and make it waterlogged. Using a rice to water ratio of 1 to 1.5, you will be able to make perfectly fluffy basmati rice without fussing with rinsing or draining giant pots of boiling water. Simple, and highly effective! {Scale recipe - click on servings and slide, but read Note 2}

Basmati Rice (simple method, fluffy rice!)

Place rice and water in a medium size saucepan over medium high heat, no lid.

Bring to a simmer - the edges should be bubbling, the middle should be rippling, the surface will be foaming.

Place a tight fitting lid on, then turn heat down to medium low (low for strong stoves).

Cook for 12 minutes - DO NOT LIFT LID.

Tilt saucepan, then take a QUICK peek to ensure all water is absorbed - be super quick, then clamp lid back on.

Remove from heat, leave for 5 to 10 minutes with lid on, then fluff with fork and marvel at fluffy rice!

Note - Large batches will take slightly longer - about 13 minutes for 2 cups, about 15 minutes for 4 cups (use a pot).

Bring to a simmer so the entire surface is rippling.

Place tight fitting lid on, then reduce heat to medium low so it's simmering gently (or low for strong stoves).

Cook for 13 minutes - do not stir, do not remove lid.

Water should now be absorbed - QUICKLY tilt pot, lift lid to check.

Put lid back on, remove from stove, leave 10 minutes.

Remove lid, fluff with fork. Serve!
