A wonderful pan bread that you can make at home.

Turkish Flat Bread

yogurt

water,

instant yeast

olive oil

sugar

salt

Whisk the yeast together with sugar and warm water and let it sit for about 5 minutes for proofing.

Put the flour and salt in a large bowl. Add yogurt and olive oil, mix it well with a spatula or your hand.

Pour the yeast mixture into the flour. Combine everything well with your hand. Wet your hand as needed when kneading the dough.

When everything holds together, make a big ball.

Cover the bowl with a plastic wrap and wait it in a warm place for about 45-60 minutes to rise well. 

When the dough is doubled in size, you can start to make your bread. Sprinkle some flour on the counter, transfer the dough on it and knead for about 5 minutes to remove the air inside it. Add little flour if needed to prevent sticking. Then make a big log from it and cut it in equal pieces. We made 12 pieces for small breads. If you want them larger, cut it into 6 pieces.

Roll each dough slice into a ball. Fold the edges to the center and then roll in your palm and give it a ball shape. Cover all the balls with a slightly damp cloth so that the dough balls don’t dry out.

Grab one ball and place it on a floured surface. Flatten it by pressing your hands on it. The thickness will be about 1 inch/2,5cm. Repeat for all the remaining balls and cover the flattened dough pieces with a damp cloth. This will give them a second rise. 

Heat a non stick pan over medium high heat and put the flattened dough on it. Turn it over after 30 seconds and cook the other side. Turn it again and repeat this for a few times. It will be done in approximately 5 minutes. Transfer it on a tea towel and cover with another tea towel. Repeat for the remaining flattened dough circles.

How to make Turkish Bread-Tips to make them soft and puff up

all purpose flour or Maida

water

plain unsweetened yogurt (at room temperature)

dry yeast

tbsp. olive oil

In a big bowl take lukewarm water. Add sugar and yeast.

Give it a quick stir to dissolve the sugar and let the yeast bloom for 10 to 15 minutes

The mixture should turn frothy. If you don't see any bubbles or any froth you probably need to use new yeast!

Add all purpose flour, salt, plain unsweetened yogurt and olive oil (2 tablespoons)

Combine to form a dough. Make sure that the dough is slightly sticky and wet (you may need to add one or two more tablespoons of water)

Add another tablespoon of olive oil and the dough should come together

Knead the dough well and shape it like a ball

Rub some olive oil on the walls of the bowl so the dough doesn't stick too much to the bowl

Cover the door with a cling wrap or a lid and place it in a warm place for 1 hour

The dough should have doubled in size

Sprinkle some dry flour on your work surface and place the expanded dough on it. Carefully fold the dough to form a loaf shape and divide it into four portions

Make sure not to need the dough anymore. We want to preserve the air pockets that have formed so that the flat bread turns out soft

Make smooth balls out of the four portions, cover them and let them rest for 10 minutes

Sprinkle some dry flour on your work surface, press and flatten the dough balls

Briefly use your rolling pin to flatten the dough to 8-10-inch circles

Pre-heat your pan for 5 minutes on medium-high heat and place the rolled out dough

After 20 to 30 seconds you will see little bubbles coming up, at this point you can flip the bread and cook for another 30 seconds

Flip the bread another time and this time it should start to puff up

After it has totally puffed up, flip it back and cook for another 20 to 30 seconds

Cover the flatbread with a cloth to keep it soft and warm

Possible toppings on the bread: butter, olive oil, chilli flakes, chopped coriander or parsley

Tip 1: Make the dough with plain unsweetened yogurt instead of milk. This will make the bread softer and tastier

Tip 2: The consistency of the dough should be super soft. Initially the dough is going to feel wet and sticky but it's going to come together as soon as you add a little bit oil. If your dough is dry and hard your flatbread will turn out like a pizza base lol!

Tip 3: Once the dough has fermented and expanded, don't knead it anymore. This way they would be minimal gluten formation and the flatbreads will turn out softer

Tip 4: When you make the dough balls or when you roll out the dough, make sure there are no holes or cracks otherwise the flatbread will not puff up

Tip 5: Make sure to preheat the pan for 5 minutes on medium-high heat before cooking the bread. If the pan is on low heat your bread won't puff up very well

Tip 6: Make sure to wrap the flatbread in a cloth as soon as it comes off the pan. This way they will stay warm and soft

Pillowy soft, fluffy, and just so good! This Turkish bread is known as bazlama and no flatbread recipe is quite like it. A side recipe that you will just have to have on your dinner table every time!

Turkish Bread

500 g Plain Flour

Salt

tbsp Yeast

150 ml Water (Warm)

Milk

tbsp Olive Oil

In a large bowl mix the flour with the salt and yeast

Add the oil, warm water, and milk to the bowl then knead until a dough is formed

Cover with a cloth and leave to rise for at least 30 minutes

Divide the dough into 6 equal parts and roll each piece into a dough ball

Roll out each dough ball to approximately 1cm thick

On a large crepe pan, cook the bread for a few minutes until bubbles start to form

Once bubbles form, flip over the bazlama and cook for a further few minutes

Remove from heat and brush with some butter or oil

Serve immediately alongside some hummus and enjoy!

Soft, Fluffy Turkish Bread

all-purpose flour

milk

tsp honey

tsp active dry yeast

vegetable oil

tsp salt

In a large microwave-safe bowl, warm together the water and milk until it reaches 115ºF. (It should be very warm to touch but not so hot you can&#39;t hold your finger in it.) Stir in the honey, and then the yeast. Let sit for 5 minutes until the yeast becomes frothy.

Add in the vegetable oil and salt; stir to combine. Add the flour and mix together with a wooden spoon until a dough forms.

Knead the dough on a floured surface for 10-15 minutes until it becomes smooth and elastic or in a stand mixer with the dough hook for about 5 minutes. It will be VERY sticky at first, don't be tempted to dump in more flour. As the starch hydrates, the dough will absorb the liquid and it will be fine.

Place the dough back into the bowl and cover with a damp towel (or plastic wrap). Allow it to rise in a warm place for 1 hour until it has doubled in size.

Prepare the dough:

Line a large baking sheet with parchment paper. Place it in the oven on the middle rack. Place a small baking dish (or pie plate) on the bottom rack. Preheat the oven and the pans together to 450ºF. Once the dough has risen, dump it onto a floured surface and divide it into 8-10 equal pieces.

Roll each piece of dough into a circular shape, 1/4 inch thick. It'll be quite tacky to work with but it's ok! Work with damp hands and keep the counter floured. You can do it. This moisture ensures soft bread.

When ready to bake, transfer the dough rounds to the preheated parchment-lined baking sheet (you may need to do two batches depending on the size). Pour 1/4 cup water into the baking dish on the bottom rack just before closing the oven door. This creates a steam oven.

Bake for 3 minutes, or until top is puffed up. Flip the breads, then continue baking for 2 minutes more. It should be puffed up and dry (internal temperature 180ºF). It won't brown much.
