Honey BBQ Chicken Wraps

flour tortillas

broccoli

cheddar cheese

barbecue sauce ((I like Sweet Baby Rays Original))

Tablespoons ketchup

hot sauce ((optional),

Heat the sauce ingredients in a small saucepan over medium heat for 5 minutes, stirring occasionally.

Place the baked popcorn chicken bites into a large bowl.&nbsp;

Pour most of the warm honey BBQ sauce on top (reserve a little extra for dipping or adding to the wraps) and gently toss to coat.&nbsp;

For the sauce:

Sprinkle a handful of shredded cheese on the base of the tortilla. I like to place them on a hot skillet for a minute or two for the cheese to begin to melt.&nbsp;

Top with 5-6 pieces of bbq popcorn chicken.&nbsp;

Drizzle with a little more BBQ sauce if you like a lot of sauce. Top with a handful of coleslaw mix.&nbsp;

Roll and secure with a toothpick, if needed. Serve immediately.&nbsp;

Assembly:

My family loves these Crispy BBQ Chicken Wraps, and I love how easy they are to make for dinner using leftover cooked chicken, bbq sauce, cheese, onion and cilantro.

Crispy BBQ Chicken Wraps

chicken (, shredded (rotisserie chicken works great!))

cilantro (, chopped)

red onion (, chopped)

barbecue sauce (, your favorite kind)

Tablespoons oil ((vegetable or canola oil))

Add chicken, cheese, onion, cilantro and BBQ sauce to a mixing bowl and toss to combine. Add more BBQ sauce if needed, to taste.

Layer tortillas with a 1/2 cup of the mixture. Starting at that end, roll the tortilla up, folding in the sides like a burrito. 

Heat a skillet over medium high-heat. Add enough oil to lightly coat the bottom of the pan (or spray generously with cooking spray) and once the oil is hot, place the wraps seam side down in the skillet. Cook, turning the wraps every minute or two, until they are golden and crispy on all sides and warmed through. Serve immediately.
