Incredible Slow Cooker Pulled Chicken Sandwiches

For the chicken:

½ pound boneless skinless chicken thighs

ketchup

sugar

water broth

Worcestershire sauce

apple cider vinegar

yellow mustard

cumin

cayenne pepper

For the slaw:

carrots

red cabbage

cilantro

sesame oil

maple syrup

salt and pepper

For serving:

whole grain or gluten free seedy hamburger buns

Add ketchup, bbq sauce, water, worcestershire, apple cider vinegar, yellow mustard, cumin and cayenne pepper to the slow cooker and stir to combine.&nbsp;

Place chicken thighs on top and flip over to coat the chicken thighs with the sauce. Cook on low for 6 to 7 hours or on high for 3 hours.

Once done, shred chicken and place back in the slow cooker and stir with the sauce. Serve immediately or turn slow cooker to the warm setting and serve later.

Make the slaw while the chicken is cooking: In a medium bowl combine carrots, cabbage, cilantro, apple cider vinegar, maple syrup, sesame oil and salt and pepper. Set aside to marinate until you are ready to serve.&nbsp;

Once ready to serve, use a slotted spoon to add chicken to bun, top with slaw and remaining bun. You can also serve these with sliced cheese if you prefer. Serves 4.

Pulled chicken is coated with a house-made barbecue sauce and piled high on Hawaiian rolls along with homemade southern-style coleslaw. These sliders are loaded with so much flavor and make the perfect weeknight meal or party food!

Barbecue Pulled Chicken Sliders with Southern-Style Coleslaw

1.5 lbs boneless, skinless chicken thighs

salt and

black pepper

garlic powder

tomato sauce

yellow onion (finely chopped)

garlic (minced)

dark brown sugar (packed)

whole grain mustard (or yellow mustard)

dark molasses* (see notes)

liquid smoke

onion powder

smoked paprika

salt

cabbage

mayonnaise

lemon juice fresh squeezed

Preheat your oven to 400°F. Spray a 9 x 13 baking dish with nonstick cooking spray and set aside.

Seasoned chicken thighs on both sides with salt pepper and garlic powder. Transfer the chicken to the baking dish and set aside while you make the barbecue sauce.

In a medium mixing bowl, whisk together the tomato sauce, chopped onion, garlic, apple cider vinegar, brown sugar, Worcestershire sauce, mustard, molasses, liquid smoke, and spices. Pour the barbecue sauce over the chicken thighs, making sure all of the chicken is coated and sauce.

Bake the chicken in the preheated oven for 35 to 45 minutes until cooked through.

Meanwhile, add the shredded cabbage and carrots to a large mixing bowl. In another small mixing bowl whisk together the mayonnaise, sugar, apple cider vinegar, mustard, lemon juice, salt, and pepper. Refrigerate the coleslaw until you are ready to assemble the sliders.

Once the chicken has cooled enough to handle, shred the chicken with your fingers or two forks.

Separate the Hawaiian rolls and cut them in half lengthwise so that there is a top and bottoms for the sliders. I recommend only assembling the number of sliders you will be serving at a time so they do not get soggy.

Using silicone-tipped tongs, pile barbecue pulled chicken onto the bottom half of the slider bun. About 1/4 cup of chicken should be a good amount, but pile on as much as you like! Top the chicken with 2-3 tablespoons of coleslaw and place the top half of the Hawaiian roll on top of the coleslaw. Enjoy!

Slow Cooker BBQ Pulled Chicken

Combine together the seasoning: garlic powder, paprika, salt and black pepper in a bowl and set aside.

In a small bowl mix together apple cider vinegar, Worcestershire sauce, brown sugar, and 3⁄4 cup of BBQ sauce.

Place chicken thighs in the bottom of the slow cooker.

Sprinkle the seasoning over the chicken in the slow cooker.

Add the diced onion and then pour the BBQ sauce mixture over the chicken, covering it fully in the mixture.

Cook the chicken for 2 -3 hours on high or low for 3 – 5 hours.

Remove the chicken and shred it with two forks.

Remove the juices from the crockpot and add the chicken back in. Add some of the juices back, about 1⁄2 cup to 1 cup, into the slow cooker. Don’t add too much back it can make the chicken too watery for sandwiches.

Add the remaining 3⁄4 cup of BBQ sauce and mix with the chicken mixture. Cover and cook for 10 minutes to let the BBQ sauce warm up.

In a pot, add all of the ingredients, whisk together, and put the heat to medium. Bring the mixture just to a boil and reduce the temperature to low. Cook for 15 minutes, stirring often.

Remove from the heat, transfer to a heat-safe jar, cover, and store in the fridge for up to 2 weeks.

OMG this sauce is incredible!  I would have never thought to use applesauce!  I'm in love!

I hadn't heard of applesauce BBQ sauce before, but it sure added lots of flavor to homemade pork chops. Will be trying it on many other dishes soon.
