This deliciously creamy Butter Bean Curry is what midweek dinner dreams are made of! Wonderfully fragrant and creamy, made with tinned butter beans and coconut milk. Super easy to make and perfect for a tasty midweek dinner. Freezer-friendly.

Butter Bean Curry

14-oz tins of butter beans (400 g) (drained)

tbsp rapeseed oil

onion

garlic

tsp salt

tsp fresh ginger (grated)

tsp coriander seeds

tsp cumin

tsp garam masala

curry powder

tin chopped tomatoes (400 g)

coconut milk (400 ml)

spinach (150 g, 5.3 oz)

chili powder

salt and pepper (to taste)

basmati rice

coriander

naan bread

In a large skillet over medium heat, heat the oil and saute the onions for 4-5 minutes until softened. Stir in the garlic and sprinkle with salt.

Add the grated ginger to the skillet, then stir in all spices. Let them toast for 1-2 minutes or until fragrant.

Pour the tinned tomatoes and spinach into the skillet and stir to combine. Add the drained butter beans and the coconut milk. Simmer over low heat for 15-20 minutes, or until thickened and fragrant.

Season to taste with salt then serve your butter bean curry alongside basmati rice, homemade naan bread, fresh coriander, and a dollop of coconut yoghurt.

Coconut Kidney Bean Curry (15 Minute Recipe)

vegetable oil (15 mL)

garlic (minced)

Tbsp fresh grated ginger

Tbsp garam masala

tomatoes (425 g)

coconut milk (400 g)

kidney beans (drained, 425 g)

soy sauce (10 mL)

salt (optional)

To serve: white rice, cilantro, crushed red pepper flakes, lime juice

Prep: If serving with rice, prepare rice.

Flavor Makers: Heat oil in a large pot over medium/high. Add onion, garlic, ginger, and garam masala. Cook until onion softens, 3 to 5 minutes.

Filler Uppers: Add crushed tomatoes, coconut milk, kidney beans, and soy sauce, then bring to a gentle simmer. Let cook for 10 minutes to let flavors blend together. Taste and add salt as needed to intensify flavors.

Serve: Ladle curry over warm rice. Top with fresh cilantro, a pinch of crushed red pepper, and a squeeze of lime juice.

A wonderful recipe that tasted great.  Mine just didn't look inviting like yours did.  I had chunked tomatoes not crushed, so I should have manually crushed them.  I didn't get your pleasing orange color.  Still, it tasted great over both rice and riced cauliflower.

Amazing. I'm a huge fan of one pot meals and this one is absolutely a 10/10. For super easy I'd do instant microwave rice and voila - a meal to please the fussiest of eaters and satisfy the more discerning palate.

This recipe is awfully blind and just had a very mild sweet flavour. I had to add lots of spices and things and cook for much longer for it to be half decent. Thanks for nothing.

Delicious!  I add a touch of honey to sweeten it up a bit and also added a can of cannellini beans
