Easy Baked Beans

Great Northern Beans ((15-ounce cans))

barbecue sauce

ketchup

maple syrup

tomato paste

Worcestershire sauce ((omit, adding extra salt to taste, to make vegetarian))

smoked paprika

dry mustard

cumin

salt

black pepper

extra virgin olive oil

Rinse

Whisk

In a small bowl, whisk together the barbecue sauce, ketchup, maple syrup, tomato paste, Worcestershire, paprika, mustard, cumin, salt, and pepper. Set aside.

Saute

Heat the olive oil in a small saucepan over medium-high. Once the oil is hot, add the onion and sauté until fragrant and soft, about 2 minutes.

Boil

Add the barbecue sauce mixture and bring to a boil. Add the drained beans.

Simmer

Reduce heat to low and simmer for 20 minutes, stirring occasionally. Serve warm.

Butternut Beans is a simple, one-pan main or side dish combining roasted butternut squash and tender beans in a smoky, creamy sauce.

butternut squash (peeled,

olive oil (divided)

yellow onion (finely chopped)

ml double cream (heavy cream)

Preheat your oven to 400°F (200°C).

Peel the butternut squash, remove and discard the seeds, and cut the flesh into small 1/2 -inch cubes. Toss the butternut squash cubes with half of the olive oil, plus the salt and pepper. Spread them in a single layer on a baking sheet.

Roast for 20-25 minutes, or until the squash is tender and caramelized, stirring halfway through.

While the squash is roasting, heat a large deep skillet over medium heat. Add the remaining olive oil and sauté the chopped onion until translucent but not browned, about 5 minutes.

Stir in the garlic, tomato paste, paprika, oregano and thyme.

Stir in the cream and water, then stir in the roasted butternut squash, beans, and parmesan, reduce the heat and simmer for about 5 minutes until everything is heated through and the sauce has thickened slightly.
