This easy keto chili recipe is one of the best keto meals you will have. The chili recipe calls for a few simple ingredients but it packs loads of flavor and does not have any beans. Plus, this low carb chili can be made up in an instant pot and ready on your dinner table in 15 minutes! Don’t worry...it’s okay if you don’t have an instant pot, you can make this keto chili in a slow cooker or stove top.

Keto Chili

avocado oil

beef

salt

red bell pepper, diced

jalapeno, seeded & diced

garlic cloves,

chili powder

cumin

oregano

(13.5 oz) can diced tomatoes

Select sauté function

Set the instant pot to the sauté function.

Add ingredients

Add oil, beef, onion, bell pepper, jalapeno, garlic, and salt to the pot

Brown ground beef

Cook on sauté function until beef is browned and vegetables are softened.

Add chili seasoning

Stir in seasonings and cook for 1 minute.

Add tomatoes

Pressure cook

Vent

Let pressure release naturally before venting out excess steam.

Serve

Remove the lid and serve. Optionally, top with cheddar cheese.

Keto White Chicken Chili

(14.5 ounces) can diced tomatoes

(4.5 oz) can diced green chiles

heavy whipping cream

parsley

garlic powder

onion powder

black pepper

oz cream cheese,

(10 oz) cauliflower rice, frozen or fresh

toppings for chili- avocado, limes, cheese, cilantro

Add chicken thighs, chicken broth, diced tomatoes, green chiles, heavy cream and seasonings to the liner of the Instant Pot. Stir to combine.

Spread cubed cream cheese around the chicken chili broth mixture. Secure the Instant Pot lid and set the valve to seal. Pressure cook on high for 15 minutes. Let the pressure release naturally for 10 minutes before releasing the remaining pressure manually by turning the valve to vent.

Shred chicken

Shred chicken using an electric mixer or two forks.

Add cauliflower rice

Add cauliflower rice. Let set for 2 minutes until cauliflower rice is heated through.

Slow cooker instructions

Add the chicken broth, diced tomatoes, diced chiles and seasonings to the liner of a slow cooker. Mix to combine. Add in chicken thighs and cream cheese. Cover and cook on high for 3 to 4 hours or low for 6 to 8 hours. Twenty minutes before you want to eat, add in cauliflower rice.
